I was worried about not having a non-stick set, so I did some homework on All-Clad's website. They have articles and videos about cooking with stainless. The videos are easy to digest and teach you some fundamentals. I have now cooked all kinds of things in my new cookware and I am extremely happy! I only had the pans for a few weeks. I haven’t had any issues. I followed the heating instructions in order to have a non stick for eggs and it worked. The brushed are very nice looking and when it comes to heating it takes a reasonable amount of time, and the temperature is consistent throughout the cooking. I’m a multitasker in the kitchen so to me, this is perfect as I had pans that will not keep the same temperature throughout the cooking process. They are a bit heavy but I like it because they are stable and don’t lose their balance when in the stove.
I decided to upgrade my mismatched pots and pans and wanted something that was easy to clean and cooked well. These are great. Well-made, durable and easy to use. The handles are a bit long but I’m able to work around that. I like these a lot better than any nonstick cookware. If you’re worried about food sticking to these and having to scrub them, don’t be. Make sure your pan is heated up, then add your oil and then your food. You will get some food that sticks but it’s not that hard to get off. A good hot water soak helps and the more you use them the more “seasoned” they become. When all else fails, Barkeeper’s Friend cleanser makes them look new again.
I used the 8 qt stockpot for basic chicken chili. It cooked up beautifully. However, clean-up was a different story. The pot looked terrible even after hand washing and cleaning with baking soda. I then boiled vinegar and water which took care of the swirling but not all of stains; Bon Ami did the trick for that. After close to an hour working with this pot, between the Dawn, baking soda, vinegar/water and Bon Ami, there is still a spot that appears to be a pit or scratch of some sort. Again, this is after ONE USE. I am so disappointed with this All-Clad. My other All-Clad from years past has even gone through the dishwasher and still looks brand new, and yes, I have hard water. I like the mirror finish in the lids, and the scratch irrelevant brushed finish inside. I got the heavier D5 for more even heating, and made Spanish rice the other day, and heated up some frozen soup. It really is nonstick! How'd you do that? It scrapes right up with a silicone spatula. Much better than other steel pans I've had, or my cast iron pan that a year later still sticks to eggs. Folks told me I missed out in the ceramic coated technology, I don't think I'll miss it.
I was very disappointed in this set. They were big flaws for such a brand name cookware. It was not worth the money, in my opinion. I wish I was able to load the pictures to show you.The smallest pan has a tiny little dimple after I soaked and washed it like I normally do for other pots/pans. I own a Cuisinart cookware set for almost 18 years and after all the washings they still look fine, no dimple or hole formed.The stock pot has a big flaw on the handle. It looks as if the handle was not put in correctly. There was still a little gap between the handle and the pot. Over all I wouldn't recommend this set, unfortunately.
