Very good. Quinoa is a versatile seed containing protein and many nutrients. It is gluten free and from what my diabetic friends tell me it does not cause a spike in their blood sugar levels. It cooks easily - just wash in a strainer then add twice as much water, bring to boil then simmer until it becomes fluffy. Can be used instead of rice in stuffings or with stir fries.
