I buy Bob's Red Mill Vital Wheat Gluten (VWG) several times a year as I use it for making "vegan meats" such as seitan, vegan cutlets, vegan sausage, vegan roasts and numerous other things. While I believe that eating a whole foods vegan diet full of fresh fruit & vegetables, whole grains, beans, nuts & seeds is what's best for us, I also find that having some homemade meat substitutes (such as those stated above) helps those who are not used to eating just the whole foods plant based diet. Aaarrrggghhh!! Well, I spend too much money on good food and ingredients to throw all that out, so I used it all, and I didn't rush through it. Used part of one bag first, then used the other bag a couple months later, and all of the resulting foods were still wonderful. Thank you Bob's Red Mill!

I purchased this product to make a chicken substitute for a casserole to be served at a fundraiser. We normally offer both meat and vegetarian versions at this yearly event. I was skeptical, but it turned out absolutely great! More attendees are opting for non-meat dishes. Bob's Vital Wheat Gluten Flour, cannellini (white beans), a little salt, and a little water mixed together and cooked as directed made a meat substitute so similar to chicken. The big "reveal" is tomorrow night.

I buy this in the bulk foods section at WinCo Foods and use it to make a variety of seitan foods. My latest creation is a vegetarian/vegan hot dog that I believe is better than anything on the retail market. I use LEM Products' plastic 26mm casing and make 6" bun-length dogs that weigh about 100g each. Vital wheat gluten makes a much better product than mushrooms, tofu, or other meat substitutes. As a WeightWatchers member now at goal weight, these dogs come in at just 4 WW points and satisfy my occasional desire to have a hot dog which would otherwise be 8-10 points. I do not follow a keto, vegetarian, or vegan diet, but some of these kinds of foods are a great change of pace for those of us on the WW "Journey". Bob’s Red Mill is my favorite brand offering great baking goods. I bought this flour because I wanted to experiment on a keto bread recipe. The bread turned out to be the best keto bread I have made. It made a big difference than the regular almond flour or egg whites powder bread. This is closer to the taste and texture of regular bread! I know that vital wheat gluten is relatively low carb. But whether it is 100% keto is controversial. To me, I am not a strict keto person. I consume keto diet for good health. I think if we only consume a small amount each time, this is still much healthier than the regular bread you buy from any bakery shops. Not sure I would give 5 stars for this but I bought this on iHerb as it was the cheaper option for me at the time. VWG may last longer than the expiry/BB date and I always keep mine sealed in the fridge. The zipper bag was not that good especially for this kind of product that lasts for many uses (unlike, say, ap flour) so I transferred the contents to another container and labeled it well. I use this for bread doughs especially for whole grain/other flours even for recipes that do not call for it. I add slightly more water as needed and use this even when i do my own swap - swap part of the flour to ww flour/etc and add this like a tbsp per cup of flour. Been using for a long time. It's great in bread recipes for a crustier crust. Great for imitation meats. And I also like to make dumplings out of it for a very-high protein vegan meal. Make sure to add any dry ingredients with it first though. Once you add liquids it gets very gummy so you cant blend other things well at that point.

Instead of buying "bread flour" I add about 1 T of Gluten Flour (which I've always called vital wheat gluten) per 1.5 cups of the unbleached flour I keep on hand. Put the gluten in the cup, then lightly spoon in the flour on top, and sweep off the extra. I use this proportion in my recipe for chewy hoagie/sub/grinder sandwich rolls instead of the bread flour the recipe calls for. Works great!It's also an essential ingredient to my all wholegrain bread so that it can rise and hold up during baking and doesn't come out dense as a brick (search for Honey Wheat Oatmeal Bread - All Whole Grain Version by thatbobbiegirl)So, Bob's Red Mill brand Gluten Flour is the brand I've used for several years now with great results. Livlo Keto Brownies Baking Mix was a letdown. The 9 oz (256 g) package did not deliver the quality I expected. The brownies turned out dry and crumbly, lacking the rich, fudgy texture I was hoping for. The flavor was also underwhelming, with an artificial taste that didn't complement the sweetness well. Additionally, the mix was challenging to work with, and the results were inconsistent. I would suggest looking for a different keto baking mix if you're after a more satisfying and flavorful brownie experience.
