Sparkling Prosecco is made using the Metodo Italiano or Charmat method of production which is done via a pressurised tank to retain the bubbles. The grapes are generally harvested early to get high levels of natural acidity and fresh crisp flavours. The wine is enjoyed widely throughout its home country but is not commonly made outside of Italy.

It's just okay. Once you've had the quality Valdobbiadene DOCG which is the best region for the glera grapes that true Prosecco is from anything else just doesn't taste quite right. The amazing thing is these authentic Valdobbiadene proseccos can still be bought for $20-40 which is really great.
