I found when in Europe I could eat everything. My health care provider told me this would happen. I started ordering this flour since it is imported and they dont genetically modify anything in Europe. So now I can do the same thing except at home!!!

I bought a pack of Nuvola flour when I bought my Ooni pizza oven. I made some dough using 60% hydration, a little olive oil, salt, and active dried yeast with a 48 hour cold proving followed by 5 hours warm proving.I used 250g balls to make 12" pizzas, thinly stretched base with a thicker edge. Added some simple toppings and then put in the wood fired oven at about 450 degrees centigrade. 60 seconds and the pizza was cooked and came out with the most amazing flavour and huge fluffy cornicione (outer crust). Over never made pizzas so light before! I've just ordered another 10kg of this wonderful flour!
