The Chef's Choice 1520 electric knife sharpener brought my Scan Pan knives up super sharp. Sharper than when they were new. I sharpened 8 knives in one evening while I was watching tv. Its very easy to use. And now they are as sharp as they should be it only takes a few seconds to keep them that way.

My wife can now also easily sharpen and touch up (hone) our knives. To save wear and tear on the 1520 electric honing wheel I am buying the Chef's Choice M475 Steel Pro (manual not electric) which takes the place of the electric honing wheel with a nifty manual "steel" and magnetic guides that guide the knives (both 15 and 20 degree edges) through a "steel" without having to get out the electric 1520. My wife is also now able to easily "STEEL" our knIves manually before and after each use. At around $120 I highly recommend the 1520 for household and light commercial use. They also make a commercial model 2100 that comes in around $500 which I am told will satisfy the most demanding professional food service situations and allow for interchangeable sharpening stones.

A must for the cooking aficionados that value and appreciate quality Knives specially those who own Asian and also American/European knives. I replaced my previous Chefs Choice sharpener than only had 1 sharpening angle for American/European lives only. I have used it to sharpen my Japanese knives, (single and double sided ) with excellent results. A very simple process with a device that has the appropriate angles for all knives. Recently I even sharpened a Japanese Quality knife that was misused and abused by a friend. The edge was badly damaged with deep dents. After 20 minutes a new razor sharp and smooth edge was obtained effortlessly. Bought as a gift since the person tried the exact same one that I have. Superb product! Went directly the Chef Choice to order it after I had originally ordered via Amazon. Product from Amazon was shipped without any shipping packaging and I received it broken! Then had to wait several weeks for a refund. Chef Choice ordering direct is now my preferred way to order!

I have used this sharpener for about a week. I have not had an opportunity to sharpen ALL my knives. What I have noticed is the first grind (coarse) does a good job of getting an edge back from a dull knife. The fine edge sharpener needs a little enhancement. When doing the right edge cycle you can hear the stone actually putting the fine edge on. When using the left edge cycle you cannot hear the edge being put on. If you apply more pressure, the guide actually moves and you can feel the wheel struggling to rotate. So, in essence, in order to put a complete edge improvement you have to put too much pressure on the left edge and I am not sure you are getting a TRUE sharpened knife. I brought this to cut down on my time sharping knives, but it nearly takes as long to do as by hand. Machine is good for achieving a sharp edge at the tip of the knife, something I struggled to do by hand. I would have given more stars, but some knives were not as sharp as I can achieve by hand. Highly recommended for those without good honing skills. It takes Asian 15 degree and European 20 degree knives with the option of converting 20 to 15 degree. Also very good if your knives are very blunt, it gets an edge restored quickly. They go through tomatoes and other foods like butter--just like they did when they were new. The instruction manual was very thorough and well-written but it definitely needs to be studied before using this machine. I was also very pleased to see that the device was assembled in America! It seems to be a quality product, and I’m hoping to get many years of service from it.

Sharper Than New

I bought this to sharpen a set of 10 year old Global knives. It took a few minutes with each knife to get the edge back, a few stropping passes and the knives are sharper now than when they were new. It can also sharpen European and American knives and even traditional single edge Japanese knives, so very versatile too. Cant be used to sharpen scissors or anything other than knives, so keep that in mind if you need a sharpener that can do that. Easy and safe to use, not too noisy and does exactly what you would expect, without hassle or fuss. Although it is pricey, it appears to be well made and that it could last many years. Very happy with the purchase and I recommend it.

I bought tis model for its "all diamond" feature. I have only one Asian style knife at present. My collection of kitchen knife is varied, carbon steel, stainless steel, cheap, and expensive. I found that a couple of passes would develop a burr and a pass or two in the hone slot gave me the desired edge that passed the "paper" test. Use of this sharpener far surpassed my previous experience with the manual use of stones in every case.The only problem I had is with my Swiss Army Knife where the blade is short and didn't fit into the slot as easily as my regular knives, but I did get a good sharp edge.My only regret is thatI didn't buy a Chef's years ago.
