Small footprint is good, but the smallness of the machine may contribute to the smallness of the loaves. Even two lb. loaves are denser than with my previous, preferred, Panasonic. The recommended flour is all-purpose flour, rather than bread flour, except for artisanal bread. I was going to return the machine but I found I missed the return window by 1 day. I decided to give the machine more of a chance. I have tried the recipes in the accompanying pamphlet; I have tried varying the size of the loaf. Once I had success with a large loaf of an old standard whole wheat loaf, but it did not repeat. Instead the loaf collapsed. Had my previous machine still been available, I would have rebought it. My favorite feature is delaying the bake to awake to the smell of freshly baked bread. I have not yet tried that with the current maker but will try that soon. Meanwhile, I remain deeply disappointed.

This is a great bread machine. It is so easy to use and all the bread I have made per the directions has come out perfectly. I so appreciate the wide variety of bread that can be made, and the fact that you can make your own dough for oven baking. Another positive is that there are 3 crust color choices. The book that comes with the machine has instructions for use on one side and yummy recipes that give step by step directions on the other. The only downside to owning this machine is the real possibility of weight gain without self restraint enjoying all the deliciousness. I highly recommend this product.

I even bought milk powder to follow the recipe to a T, an ingredient I would never have on hand), and the loaf was inedible. I threw it out. The top of the 2lb loaf (max size for this machine) "blew out" and stuck to the inside lid. Color on rest of loaf was fine, but I had to cut/pry the loaf out of the pan because it had stuck to the handle. Texture was ok (it still will never be the same as kneaded by hand), but flavor was bland to the point of inedible. Several dark spots were on the exterior of the loaf where ingredients had not properly mixed in. (There was also an unappetizing clump of ingredients on the interior of the bread.) I was a professional chocolatier for several years so I know how important temperature and ingredients are to the final product. It is humid outside, and the booklet says that you might need more flour if it's humid, but this unit was operated inside with the A/C on. In short, even the recipe that comes with the machine for the simplest of breads is not good. I bought a breadmaker years ago, and gave it away because it made terrible loaves. I thought maybe the technology had advanced—turns out, it has not.It also beeps. A LOT. It beeps when you are setting the machine. It beeps (4 sets of 5 long beeps) when it's time to add stuff in (even if you are not adding anything in), and it beeps 10 times when it's done. There is another long beep at the end of the Keep Warm cycle. If you plan to run this thing at night (with the handy Delay Start timer), I hope you sleep in a soundproof room. There is no way to turn off the beeping "feature." If you have a ton of time to fiddle around with different recipes, be prepared to tweak those recipes based on the humidity level in your home, and be prepared to throw out a few loaves til you get it "right", maybe give this unit a whirl. It is not a user-friendly machine out of the box.

Great, compact machine
29 August 2022

It’s definitely compact and fits well on our counter top. I’ve never used a bread machine before but have made homemade bread. Wow, is this easy! You just take 5 minutes to put in the ingredients and hit go! So easy! It is a little loud while first mixing, but that only lasts a short time. I also prefer to take out the paddle so that there’s a smaller hole in the loaf. You still end up with a whole not matter what because of where the paddle fits, the bolt sticks up. But it’s super small and no big deal to me. I would buy this machine again. It comes with a small recipe book which has quite a few recipes.

Learned to love it. Perfect Cinnamon Raison bread
30 November 2022

This was a hate / love relationship. The first two attempts to make bread were not good, I even put this in the trash for an hour. After fetching it back out of the ‘trash area’ I thought about it for a couple days. After reading up on the importance of Room Temperature ingredients and good yeast I tried again and finally made a decent loaf of white bread. After a dismal two loaves of rye bread I graduated up cinnamon raisin and have found my happy spot. Many loaves of perfect cin rais bread. I made a loaf of fresh French bread to go with homemade soup, both were pretty good. My wife really enjoys it when the bread is hot and fresh out.Definitely give it time to get used to. I only do the 1.5 pound measurements with light crust and take the loaf out promptly when ... MoreThis was a hate / love relationship. Made a perfect loaf even with vegan substitutions
11 December 2021

I have had zero luck baking bread on my own, so the idea of a machine that would do it for me with me just adding the ingredients seemed impossible. This is compounded by the fact that I am one of those annoying vegans and sometimes my substitutions don't always jibe with baking recipes.Well, I can tell you that my first loaf with this machine, substituting oat milk powder and plant-based unsalted butter, turned out perfectly. Frankly, I was expecting a learning curve, for my first loaf to come out misshapen and inedible, but nope -- 3 hours and 15 minutes after I hit start, I had an almost perfect loaf of bread that tasted great. I did not remove the paddle after the 3rd rise, but the hole it left was not that bad (round, size of a nickel), and I had zero issues getting the loaf out of the pan -- slid right out, paddle remained fastened to the pan.I researched so many machines -- some were too big, some too small, some had too many complaints about burnt or botched loaves, so I am pleased with this purchase. Pizza dough, jam, and pretzels are next in my list of things to try.

Not a good purchase
1 November 2022

I have owned three other bread makers over the last 30 years--Breadman, Zojirushi and Panasonic. All were much better machines than this Cuisinart. The Panasonic was the very best. When it finally wore out, I purchased this bread machine and was thoroughly disappointed. It made an edible but insufficient loaf with the five loaves I baked, using different settings. The best setting was the French bread setting, but still the loaf was heavy and the top crust lost because of unevenness and unsliceable. I returned it. I replaced it with a mini Zojirushi which so far is very nice. I did not get another Panasonic because they have become extremely expensive.

So far, so good
16 December 2021

So far I've only made the basic white loaf and it was good. I am looking forward to the many other recipes. The recipe book is comprehensive. I've learned always measure the ingredients exactly in baking. I use a food scale and mostly use grams, I get very precise. Always add the ingredients in order as the recipe says. Very important. As far as the beeps, some may feel they are too loud or too much. I personally like it. It's a good reminder. I can hear it over other things going on around me. I have another brand bread maker which I like, but the beeps are not as loud, I have missed them several times. The beeps to remove the paddle and/or reshape the loaf is convenient. I haven't done that yet, but see myself doing that future. Paddle didn't get stuck -- maybe the coating on this is smoother than my other. I like that the display lights up. I need to use a light for my other one. So far no problem with it vibrating and moving, but I haven't used it that much. The suction doesn't seem as strong as my other machine, time will tell. This Cuisinart has an elongated container making a bread loaf closer in shape to standard loaf. I don't put any of the parts of either machine in the dishwasher, Manufacturers may say certain parts are d/w safe, but I've practiced to always hand wash mild detergent and soft cloth, it's a safer option. I can't say it's 5* "excellent" since I haven't used it enough yet. I would still recommend.

The Best Bread Machine I have Ever Used
4 January 2022

I have used a number of bread machines over the past some years, learning as I went along. My last machine did a nice job for dough and I had pretty much ended up using it for mixing the dough and baking the loaf in my oven. Mainly because I liked how my bread baked much more nicely in a pan in the oven rather than in the bread machine itself. After I purchased this Cuisinart, I tried a few recipes included in the manual and baked them in the machine. I was surprised and happy with how nicely they turned out. The crust color was excellent & was according to how I selected. The menu selection was also excellent and pretty much what I needed - had a few extras without being overwhelming and over the top. The machine mixes the dough really well - a little attention may be needed for some doughs in the corners with a rubber spatula at the beginning, but nothing more than that. I find the machine to be quiet during kneading. Some have complained of loud beeps for "add ins" or "paddle removal" but I appreciate this. I remember a machine I had that I could easily miss hearing the beeps for those 2 functions and was always playing "catch up" as I had missed the "add in" for raisins or whatever. I am also enjoying that I can do a "French" cycle rise & knead, remove the paddle & dough and continue the final rise and bake out of the machine. I used to have to set a timer and do the extra rise/knead manually. The results in this machine were quite nice. So in other words, if you want to bake in your oven, you have the option of not only selecting the "dough" cycle but also selecting for a particular bread function and removing the dough at the "remove paddle" signal. Anyway, I am still learning this machine but very impressed and loving it so far. I dont think you can go wrong with this bread machine. It is small, but mighty. It mixed/raised a 4 1/2 cup flour cinnamon dough recipe perfectly on the dough cycle. Looks great with it's stainless steel & black plus its quite small footprint that still produces an awesome loaf of bread. Thank You Cuisinart!!PS- The breads I baked successfully so far in this machine are:Cuisinart Recipe Book - Jalapeno Cheddar Bread (1 lb) / French Bread Loaf / Parmesan Peppercorn French Bread 1 lb loaf. (All are quite wonderful/favs & do not include other recipes tried that were all very good.)Also King Arthur site recipes include Chewy Semolina Rye Bread (excellent for Reuben's, sandwiches & toast) & Bread Machine English Muffin Bread (great of course for toast but also sandwiches, etc) both are excellent (altho I did tweak some). No matter they are still excellent & good to add to the rotation. This Cuisianrt handled them all well. The only thing I baked in my oven were the cinnamon rolls. Loving this Machine.
