This de Buyer sauté pan is an ideal pan for preparing the perfect dishes. The pan is made of sheet steel, which heats up quickly and tolerates high temperatures. De Buyer Pans contain a high carbon content. This allows the pans to last a lifetime, provided you take good care of them. Like all de Buyer pans, the pan must first be burned in. Before you use a de Buyer steel pan you must first burn it in to create a non-stick layer. To burn in the pan you need an oil, however, olive oil does not work well, it cannot handle high temperatures. Put the pan on the stove and heat it on low heat. Pour a generous layer of oil into the pan and let it boil for 5 minutes. Do not be shocked by the smoke form.

My Country Fry Pan (12.5@) is a joy to use. Even heating across all cooking surfaces, a heft that tells you it means business and easy handling, even for a pan of its size. I use on the stovetop (induction) as well as in the oven and smoker - at lower temperatures - for cooking Greek Potato Bake, shrimp and grilled vegetables, and a Middle Eastern lentil dish.Highly recommended. Will likely get a smaller version soon. I’m

This pan is HUGE. and this huge pan is amazing. First thing I made was a beef stir fry. Next morning I fried up some link sausage and eggs. And that night I deep fried chicken fried steak. Everything came out perfect. I can see this becoming my go to pan when cooking for the whole family!!

Like my other de Buyer pan, this one has been wonderful in evenly heating and maintaining my desired cooking temperatures. Easy to season and keep like new! I especially appreciate the high sides for large one-pan meals. The pan is heavy but that is compensated for by a helper handle. Love it!BTW, my pan arrived damaged and I did not at first notice the damage to the pan. The handle had come through a corner of the box. I took a photo of the box but then did not notice the damage. I seasoned it and was using it when my wife pointed out the fact that the handle was bent. Unbelievable because it is made of very sturdy steel! I thought only Superman could bend steel! Anyway, I contacted de Buyer and very graciously and quickly they sent a replacement. One story here: ... Blind luck saved us because we had not recycled the carboard on the day someone from UPS knocked to ask for the return. We had no idea this would happen, but fortunately we still had the cardboard and could put the pan in it. A wonderful, appreciated response from de Buyer.

The de Buyer frying pan is a heavenly escape from Teflon and has become my go to no stick option. I followed Jed’s online tutorial to season it. He said 6 times I did 10. After 10 days I have a pan for life. It has also made me realize I am underutilizing my cast iron pans especially the 70 year old cast iron pan I inherited from my Mom!!
This 12.5" Country Fry Pan is an excellent choice for recipes that call for larger portions than normal. The capacity to saute large amounts of vegetables with or without meats is perfect for families and/or guests. A recipe favorite includes one-dish meals starting with vegetables, adding chicken, seasonings, a little wine and stock and mixing in cooked penne pasta. Any stir fry recipe is also perfect as the quick sear and non-stick properties of this pan make for a perfect meal.
I've only cooked a couple of things in this pan but it is great. Easy to shake the food as it cooks and it heats nice and evenly. I'm a de Buyer Mineral B fan and have almost a complete set of their line. They are a little heavy for some but the quality and performance (once seasoned) is second to none.
Seasoning and cooking with this 11” skillet was a simple satisfying experience. No issues, no drama no trauma, The Egg Test went well, pancakes, cornbread, in an oven and on the range all good. This is a very good size for daily use.
This product is sooo good. When I was reading the reviews before purchase there were a few bad ones saying everything they cooked stuck to it. Well, experiencing this product for myself, following all the instructions I can quite honestly say it is a dream to use and regret not buying one much sooner in life. It makes anything you cook look so much better somehow. It looks really stytlish too and this one is a great size for all your frying needs. Perfect size for an omelette, and not too heavy to handle. You will find it needs less heat to it than a regular pan and holds the heat better. I have not burnt one thing since using this probably because it does hold the heat better. Would recommend, but be prepared to change the way you do things the results are worth it.
A very sturdy pan. From the price point I wasnt expecting this kind of quality. If you know what youre doing youll be able to exploit its great heat retention capacity to achieve great cooking results. Also dont be afraid to take it to high temperatures. It will hold. In the picture you can see mine after a few thin layers of oil and a couple steaks. Heat applied properly will make it develop its patina. Also ignore the pundits that say not to wash your pans... Unless you enjoy salmonella and other nasty bits. The only downside is the coated handle that can only withstand 10 mins in an oven at 200C according to the manufacturer which kind of defeats the purpose of a carbon steel pan.Edit Remove the yellow silicone logo and your pan is good to go for as long as you ... Tried it myself. Handle coating held even where it was contacting the oven walls. Defo 5 star stuff
Easy to de-wax and get straight into cooking. Takes a bit of getting used to re heating enough to sear meat but once over that hurdle makes a beautiful job of perfectly cooked steak. A bit heavy for arthritic hands. Cleaning pan easy enough with paper towel and water. All in all happy with the pan. Just going to keep using it alot to become more familiar with how it works.
