Managed to follow the initial scalding/seasoning instruction and haven't had anything I couldn't clean up since. Small nick on one handle that has held well for at least 7 years--I have been more careful since. Am now eyeing the sauce pot.

I sure wish I would have known about a dutch oven from Emile henry when I first got married. I would have bought it right away. This is awesome for making soup. I so enjoy using it, and every soup I have made since has been a huge success. I highly recommend this. The red color is beautiful. It's so easy to clean to.. The packaging how it was shipped was amazing. There was no chance of this Dutch oven breaking with such thoughtful and well engineered packaging.

I seasoned it, using the rice and water method, according to instructions on the Emile Henry website.After using it for a while, the pot developed a brown ring and heavy crazing on the bottom that oozed something when heated. And it smelled rancid.I always cleaned the pot in the dishwasher, or by hand and/or using vinegar and water. I contacted Emile Henry and described the problem. EH responded saying a replacement bottom was being packed up and would soon be on the way. So I waited. And waited. And waited.When I inquired about the replacement, EH asked for a picture of the outside bottom of the pot to get the number so they could ship the right part. This week, I boiled pasta on my smooth glass stovetop in my Emile Henry round Dutch oven. As it cooked then cooled in the pot, I made dressing, shredded cheese, and chopped ham and veggies. I added the dressing to the pasta in the pot and placed it in the refrigerator. After a couple of hours, I added the rest of the ingredients to the chilled pot and placed the lid atop, returning to the fridge. The next day, I grabbed the pot as I headed out to work where we were having potluck lunch. It was so convenient to use only one pot that wasn’t too heavy to carry. Everyone at work loved the pasta and wanted the pot. I popped the pot in the dishwasher when I got home from work and it cleaned up well. I am already looking into replacing more pots and pans!
I bought it primarily to bake wet dough long rise sour dough types of breads and it has been doing a great job providing a nice rise and a beautiful crust. I like that you can remove the the lid and let the crust get as dark as you like. The handles are easy to grab and feel secure in your hands when taking in and out of a very hot oven. It is easy to clean. Also, it is lighter in weight than the equivalent enameled cast iron pots which also makes it easier to handle.The red color makes it appealing to the eye. When it gets hot the red color deepens to an almost burgundy red. It returns to it's original color when cooled.Two issues are: 1. The lid does not sit perfectly flat onto the base. It wobbles a bit. I am planing to contact the company to see if they agree.2. The instructions to fill the pot with milk and heat it up and so on.....seems a bit much and not very well explained as to why this needed to be done. I (my fault) let the milk get too hot and scalded it and worse burned it leaving a black crust on the bottom of the pot that was very difficult to remove. I thought I destroyed it but I did get it clean. However, I noticed very fine crackle lines in the glaze on the inside bottom. I don't know if I did any harm or not.I hope to do some slow cooking in it like stews and soups which I think will really make it well used pot in our kitchen.
For quite a while I've been trying to decide what Dutch oven I should buy. I decided against enameled cast iron because it is heavy and can't (shouldn't) be put in the dishwasher. I ordered the 4.2 quart Dutch oven from Emile Henry because I have several of their other products and love them all. It was the right decision! I have used it on the stove top and in the oven. It cooks beautifully. It's also very easy to clean. I'm a diehard Emile Henry fan at this point. Looking forward to adding to my collection.
This Dutch oven is fantastic in terms of heat distribution, easy to clean. I've mostly been making soup in it. However, it has broken out in tiny bumps all over the sides and the cover, and it looks like the bottom is cracking. I don't know if I just got a lemon or what, but this has not happened with any of my other Emile Henry pieces. It's the first one that I've put on the burner though. I'm hoping they will replace it for me. Emile Henry's customer service has always been great to me. I'm hopeful! The Dutch oven is also beautiful in red!
Our original Emile Henry Dutch Oven recently broke through our own negligence. We were excited to find we could purchase the replacement through Emile Henry ISA. It arrived quickly and we are back to using our favorite cooking appliance. It cooks beautifully, consistently and keeps our food warm through the length of our meal. The Dutch Oven comes highly recommended.
Bought this for no-knead bread. I should have bought one size down, but this is an amazing device for the purpose. Other reviewers took issue with the milk seasoning method. Apart from the cost of the milk, I had no concerns. If you follow the engineer’s instructions exactly all will be well!
I have had this large dutch oven for several years, and my husband says everything that comes out of it is delicious - it must be the dutch oven lol. But on an un-funny note, for the first time I tried to use it on the stovetop (it says "flame" right on the bottom) -and when it started heating up, fumes were coming off of it and so was a toxic smell. I think I might have just given us all cancer by trying to use this on the stove top. i will not be using it again, very sadly, and am horrified. This flame dutch oven is NOT stop top friendly!
