Really nice heavy pan that heats up evenly and cooks nicely. I’ve tried different methods to stop food sticking and have found that canola oil spray is the best. High quality polished stainless steel surface makes cleaning stuck food easy — just soak in hot soapy water to loosen stains then use a soft sponge and a bit of elbow grease. Only critique is the copper has discoloured after the first couple of uses but that hasn’t affected performance.

Cooked risotto with this pan. It heats evenly from the bottom without burning.Normally it takes more than an hour to cook 1-cup risotto with a non-stick, this pan takes 45 minutes.Also did a pan-fried steak over the same weekend. It sears the steak brilliantly to achieve the crust. Does not burn when followed with lower heat to bast the steak with butter, garlic and rosemary. Result: perfect medium rare steak with crisp garlic and rosemary.Easier to clean than cast irons. This has become my prized possession.

Exactly what I wanted! It's a non-coated pan so yes food will stick. I cook meats, sauces and firmer veggies with this pan. Buy from their non-stick range if you are cooking delicate foods like eggs or fish.

Great pan for individual dishes or side dishes—have been using the bigger version for years and can’t complain. Does require a little more elbow grease to clean compared to a Teflon style, but lasts so much longer. Also gives you an amazing crust on steaks and fry’s up greens beautifully.
Beautiful to look at, sublime to cook with. This spacious pan allows perfect distribution of heat and is a good size. Whatever I prepare in it turns out better than ever before. It's my go-to pan for everything now.

This is a beautifully made skillet but because of the materials, particularly in the base, it's pretty heavy and not easy to lift for any extended period with just one hand. I wanted to try this one because I was tired of the waste of throwing out old non-stick pans. However, there are some foods, regardless of the amount of oil used, that just like to stick to the pan. This now makes me cautious using it and have reverted back to the couple of non-stick pans I still have. Maybe I'm just not using it correctly? Washing up is not too bad after a bit of a soak and following the care instructions.
Haven’t used my larger pan yet but expect it will be the same as the smaller sized pan. So…good weight, washes up well (I presoak the pans after use). Food does stick when cooking but it’s a compromise if you don’t want to use non-stick pans

While some recipes may call for high heat this is not a misuse of the product - and if an expensive pan can’t handle occasional use on higher heat settings then it is a failure of the product. This is a great little pan. We bought it to replace a skillet that we had (unwisely) put in the dishwasher, so we've started fresh with this and it's excellent. No fat needed in the pan to cook eggs etc, fits more than half a dozen snags, heats really well across the board, and no troubles with cleaning. Just don't ever put it in the dishwasher and you'll be fine!
