Francine T45 Multi-purpose Flour 1kg

Getting good quality flour is the easiest way to improve the way your bread will look and taste. Flour from supermarkets tends to be very white, often old, lacking in taste and natural enzymes, and, most important, not very useful for bread baking. Understanding flour types: French flour type numbers indicate the ash content (in milligrams) per 10 g flour. The numbers are a factor 10 lower than the German types. Type 55 is the standard, hard-wheat white flour for baking, including puff pastries (pte feuillete). Type 45 is often called pastry flour, and is generally from a softer wheat (this corresponds to what older French texts call farine de gruau). Some recipes use Type 45 for croissants although many French bakers use Type 55 or a combination of Types 45 and 55. Types 65, 80, and 110 are strong bread flours of increasing darkness, and type 150 is a wholemeal flour. Note that there is no type 40 French flour like the German type 405, the closest is type 45.

I ordered the farine de Ble, the instant yeast and the Belgian Pearl sugar and could not be happier! Waffle Pantry packaged everything perfectly! There were no spills or holes in any of the bags. I haven't made a cake yet but Im really looking forward to it! I also did grind the sugar so its easier to use - great idea Waffle Pantry. Thank you also for your guidance on which flour and yeast to buy. That was super helpful in ensuring I have the best outcome with my baking!

I was quite disappointed with my experience this time:First i had to leave an email in your website to know where and when my order will ship, because 10 days after my order it still was not processed. Then imagine my disappointment when I realised , after finally getting the package that both packs of flour will expire in july !!!I was avoiding Amazon because you never know there if you get new or older / damaged goods . ( Although, even Amazon is getting better and it's a breeze to receive and return packages ...)It would have been 5$ more expensive but at least it would have arrived at time for my party - which was the reason I needed the all purpose T45 flour....

I'm not gluten intolerant but I prefer this flour over the American brands. My friend has a gluten intolerance but has no problems when I use this flour in desserts. She has no reaction!

Francine is the only flour that doesn't cause any problems...

Francine is the only flour that doesn't cause any problems with my gluten intolerance. It works wonderfully well in baked goods and for thickening purposes. All I've used for years.

Great flour but....
1 March 2022

I really like this flour it is much higher quality than other flours I have used the only problem is I ordered 3 bags of flour to have use of for a while. I received my 3 bags of flour on February 23, 2022.... The top of the bags have a best by date of March 9 2022, that only gives me a little over 2 weeks to use 3 bags of flour . I don't know if I got old bags or the flour just goes out of date that soon. I wish I knew this before buying the 3 bags I don't know if I can use 3 bags of flour in 2 weeks since in my house hold it is only my husband and me.

I'm a convert!
30 December 2022

I bought this because I have an intolerance to American gluten, but can eat it in European countries without any problem. Also, I was tired of and unimpressed by the flour alternatives available locally. This entire line of flour is great and allows me to eat like everyone else finally. My first real "test" of the quality of this product was to make an apple crostata. The crust turned out unbelievably tender, flaky and delicious. The best I've ever made by far! This is certainly more expensive than US flours, but is worth every penny.

This makes the best kolaches! No frankenflour here. Pure wheat, not genetically modified or sprayed with poison. Yay!

The best flour I have found!
27 August 2021

Being gluten intolerant, I've tried different flours, including Italian flour (which I had a severe allergic reaction to). Thought I'd try the Francine French flour and I've never looked back! It's a wonderful flour. I even tried making bread with it and it was amazing. It rose so high and had an amazing flavor. Anything I make with it is wonderful. Now I don't have to put up with the awful GF bread products from the store!

We love this flour
6 September 2021

We love this flour. My wife has a sensitivity to American flour. We originally thought it was a gluten intolerance but we discovered that she can eat things made with French flour in moderation. This has allowed me to make proper roux, pie crusts, bread, and pizza which she can enjoy. Thanks!
