G-7846 Classic 2 Piece Kitchen Knife SetGlobal Global knives are unique because of their edge and the way they are balanced. The most important feature of any knife is its edge, and the Global edge is truly its signature. The majority of the Global knives are sharpened or ground on both sides of the blade like western style knives. However, their edges are ground straight to a point rather than beveled resulting in a dramatically sharper knife which stays sharper longer. The edge is so large and prominent that it is easily seen with the naked eye and extends a quarter inch or more up from the tip of the knife. To balance their knives, Global uses a hollow handle which is then filled with just the right amount of sand to create the correct balance. Global uses this method rather than using a full tang and a bolster to balance their knives for two reasons. First, it is a far more precise than using a tang and a bolster. Second, Asian knives typically do not have bolsters, since they only serve as a hindrance to cutting and sharpening. Global knives are made from the finest high carbon stainless steel available for producing professional quality kitchen knives. Yoshikin uses its own proprietary stainless steel which it calls CROMOVA 18 Stainless Steel. This steel is hard enough for Global knives to keep their edge for a long time, but soft enough so that it is not too difficult to sharpen the knives. The CRO in CROMOVA 18 stands for chromium and the 18 is the percentage of chromium in the steel. This high percentage of chromium contributes to Global's good stain resistance. Made in Japan.

It’s a great set of knives. The edge is incredibly sharp. The only thing I would like to see is a somewhat larger width in the handles and some more weight. I’m very satisfied otherwise and looking forward to more of my old knives breaking so I can get more of these.

The knife, steals and blades are absolutely stupendous! The edge design is razor sharp. The chef's knife works like a dream, I have never had such a pleasurable food prep before. The paring knife, on the other hand, is not my cup of tea. I like the blade design and length and performance. However, the handle is way way too narrow for me. It is flat like a surgical knife. I did not know just how narrow it would be. It is very difficult for me to do pairing work with the handle as is - I am simply unable to grip the handle (as you can see in the photo, I really have to squeeze my fingers to hold the blade which actually is very uncomfortable). I should have gotten the large handled paring knife with the same blade. Now that I'm more familiar with the Global knife ... MoreThe knife, steals and blades are absolutely stupendous! Now that I'm more familiar with the Global knife handle design, I will probably end up getting the large handled one down the line. I was trying to save money by getting the two-piece set, which was a very good deal. However, in the end I didn't end up saving any money because I won't get much use out of the paring. All that said, I can't recommend the blade performance enough on these knives, and the ease in which they can be maintained on the sharpening stone and by stropping.

Paring knife is very uncomfortable. Hard to hold. Prefer my German paring knives. Getting relegated to back of draw. Chefs knife is fine.

At 5'3", with a 6'+ Josh' husband, there aren't many knives we both enjoy using, but Global is it!Easy to handle, light, no slipping? we've had Globals for a decade now and they're perfect as new.I can't figure out how someone causes these knives to rust, but goes without saying you never, ever put knives in a dishwasher? Wash with water or dish soap and water, rinse and dry fully before putting away. Nothing is going to harm this knife, for life!
These knives have made cooking for my familyso much more enjoyable and easier. Buying these kniveswas the best thing I have done for myself in along time. Preparing for a meal is no longersuch a chore.
I am very pleased with my new knives. I bought my first Global knife about 4 years ago and I used it all the time. So I wanted to buy more and I was lucky I saw the set of three at a good price. I bought them immediately because I know how good they are. Just be careful because they are very sharp.
I have used serrated knives to cut tomatoes and peppers forever, but when they get dull, the in order to sharpen them, you ruin the serration. I heard about global knives in re their balance, so I thought I'd give one a try. I was very pleased to find that it easily cuts tomatoes, AND it can be sharpened. Fits the hand nicely, too. Winner, winner, chicken dinner. (I expect it would cut the chicken nicely, also.)
I love this brand. I own many different brands but Global knives stand out for their sharpness and feeling great in my hand. They retain their sharpness better than some other brands as well. Excellent value at a fabulous price!
Keeps a good edge and is light and well balanced. These are the knives I pack and take with me for weekend stays when I will be cooking. The onlyproblem is everyone else wants to borrow them.
These knives hold their edge better than any knife out there. They are so nicely balanced and have a great grip, making most cutting jobs a breeze! Great quality, craftsmanship and design.
