I am impressed with the Global range and this one is a joy to use. I only deducted a star because it is expensive, though I accept that you get what you pay for but it is still a high price.The knife comes sharp enough to use and is beautifully balanced. It is flexible enough to use on the most delicate of roundfish tasks. Real quality

I have several Global knives and have always liked them, so when I saw these, I thought - why not!? I was wrong. Clearly something is going on as the small knife has begun to rust. I think I’ve used it maybe once (I’m not a dainty guy, I like using big knives). The larger knife has not.The other reason I’m writing this review is to warn customers that there is ZERO customer support with these. If you’re stainless steel knife rusts (because Global got popular and is using sub-par stainless clearly) you’re out of luck. When I told Williams Sonoma about this, they also refused any support. So the bottom line is, enjoy your rusty knife, and do so at your own risk! I’m enclosing photos. This is after at max, one use, hand washed, and stored in my knife block. I bought these knives after Christmas last year with a gift certificate. I hope to buy them this year for my children's families. Best investment you can make in your kitchen.

I am working at putting together a complete collection of Global knives. They never disappoint! I was happy to acquire this set and I have been enjoying them daily.
Although it's a flexible knife, but tricky to reach some part of the fish and not able to crush through the fish bone. I would prefer to use my Japanese deba bocho knife to fillet my fish which will give you a cleaner cut but that's my preference anyway. Overall a great knife with weight balance ratio and superbly sharp knife.
I love my Global fish filleting knife.My husband and sons are all keen fishermen and have been catching heaps of Spanish mackerel, school mackerel and coral trout.I have always found mackerel to be the most difficult fish to skin. Now I have a great quality knife which enables me to skin all the fish with ease, even huge Spanish. My son is so impressed with my knife that he wants to buy the larger knife for himself to do the filleting. Annette Nth Qld
I had been spending so much time in the kitchen with cutting veggies and meats with my dull knives. Now, I spend half the time with food preparation and I can enjoy my meals faster. Cooking meals that require a lot of cutting and dicing is so much easier. My favorite sausage, egg, and cheese bake requires dicing fresh tomatoes, bell peppers (red, green, yellow) onions (green/Vidalia) spinach, etc. My new knives really help!
I hand wash and dry my knives before putting them back into the the knife block, but noticed a rust spot on each of my knives. I ordered these knives on 10/25/22, received them on 10/29/22, and first used them mid-November. This is the first time I’ve had any knife start rusting, especially stainless steel. Is anyone else having this issue?
I have been upgrading my knives slowly because they can be expensive. I own various brands now.But this knife right here is the sharpest knife so far. I love the look and style.Today I was seasoning and cutting my salmon filet for tomorrow. Most knives I have to keep cutting down and poking skin to slice.No not with the large knife on this set. I just slice down and it cuts the skin perfectly. It is like cutting butter.My new favorite.
Carving knife has micro chips after about 3 uses. Unsafe to use. Pairing knife is already dull!
