Global’s vegetable chopper is inspired by traditional Japanese Usaba knives, with a large flat blade which lets you chop straight through the whole vegetable, from sweet squash to earthy beetroot. The long, rectangular-shaped blade has a slight knife point, and the design is popular amongst professional chefs in Tokyo. The strong blade encourages you to chop straight up and down rather than pushing and pulling the knife in a horizontal motion. This leaves a clean cut on every vegetable. The Rockwell scale measures the hardness of steel, and this Global knife measures between 56 and 58. This rates on the higher end which means the blade is stronger, and is less likely to chip or become damaged - perfect for frequent use. I've wanted to try a Global chef knife since reading Anthony Bourdain's endorsement in Kitchen Confidential, and it does not disappoint. The Massdrop price made it a no brainier. My wife has even taken to it. I've been trying to get her to use full size knives forever, but she's always preferred dinky little paring knives. Now the Global is the first one she grabs.

In the words of a culinary instructor I lived with for a time: "If I were going to work as a professional cook in some restaurant starting Monday, I'd get a set of Globals. They're great if you want a good knife that doesn't need to be babied."Spot on. My wife and I got a couple from our wedding registry, and I bought a few more when this sale went live. Some people don't like the dimpled steel handles because they can get a little slippery compared to wood, but that's the only downside I can think of for these things.

Brilliant knife which I prefer above all the others I own, including Henkels and Sabatiers. Light, razor sharp, slow to dull and incredibly easy and quick to sharpen using any old steel, strong enough to chop straight through an enormous swede, and beautifully balanced.Very versatile, despite the way it looks and its vegetable knife description Ive used it for everything, from jointing chicken to chopping radishes.Incidentally, I know its so good because I bought another one from a seller on Ebay, and it is clearly a fake. The fake looks identical but doesnt cut straight, and doesnt sharpen well. You realise how good the original is when its directly compared to someone elses knockoff

This is my second Global knife - a few years ago I purchased the bread knife, and recently purchased the vegetable knife. Incredible quality and weighted really well so it’s super comfortable to use. I will slowly be replacing my kitchen knives with the Global brand - quality knives and competitively priced!

A onepiece, solid metal design, the 18cm Chopper is deceptively light and slim bladed. Compared to most of the large choppers on the market, it is the lack of weight which you first notice. Dont assume youll have to press or chop harder when using it its balance is really sweet if youre used to a heavier knife, getting used to the weight can be a bit daunting at first, but persevere, youll find the cutting is deceptively delicate, if a matter of confidence in the first couple of days.Id never used a chopper before, had confined myself to the use of the traditional cooks knife. The chopper makes a valuable addition to your range. It slices vegetables beautifully, and you can quickly adapt your cutting style to chop with speed and safety. It also feels slightly slimmer than, say, Sabatiers, so may suit smaller hands.Although a one piece, there is little danger of your hand slipping onto the blade edge although the blade does not curl back towards the handle Global use this design in their cooks knives , the blade is so broad it would be difficult for your forefinger to slip onto the edge. If I do have one criticism, however, it is that the corner of the blade, facing towards the handle, is very sharp, and it is quite conceivable someone could cut themselves on it though the risk must be tiny.The cutting edge, of course, is superb tempered, hardened, stainless steel, compared in the adverts to a samurai sword blade. It keeps extraordinarily well. Use a soft plastic chopping board, not a metal or glass one Global recommend that you use a water stone or ceramic whetstone for occasional resharpening this buffs up the edge. Using a traditional steel can bruise the metal and actually make the edge more fragile. A stone polishes the edge down to an even sharpness.And Ive taken advice and bought a magnetic strip to hang up my knives if you are going to invest in a high quality blade, take care of it and dont chuck it in the kitchen drawer where its edge can get damaged. Of course, if you have young children in the house, make sure all knives are safely locked away. Used properly, this is a superb tool, but grabbed by curious young fingers, the edge could be unforgiving, and it must be a tempting shape for young hands to toy with.This is an extraordinarily beautiful tool. As a practical design, I am absolutely confident of its quality I think it looks great, too, but that really is a matter of taste.

Excellent modern take on a classic Nakiri and the balance is absolutely perfect! So excited to attempt this convex edge with a micro bevel on my belt sharpener. Such a great knife!

My first ever Chef knife and was a handmedown that was blunt. Must be 20 years old now and still going strong. Forget using steels as they knacker the edge. Use a coarsefine combo whetstone and watch the Global sharpening guide video. Mines still razor sharp but requires investment of time to keep it that way. Sure, the Shun and MAC range offer a better edge and harder steel I have both for comparison but, once you get the famous index finger callus, they become a part of you and Ill never part with mine. Has earned me a fair few pennies over the years and has earned its place in my knife roll as a permanent fixture.Contrary to a couple of reviews, this IS a one piece knife. You can sort of rock chop with it but it doesnt suit the style of blade.Again though, invest in a whetstone and some sharpening knowledge as it pays dividends.....

I bought the Global knife as a replacement for one that I broke by abusing it too much.The knife is unbelievably sharp to the point that extreme care must be taken when cleaning and handling.It cuts flesh as good as a razor blade! HonestlyThe only downside is that when the knife eventually gets blunted, it is impossible to ever get the same level of sharpness back. Not DIY anyway.The knives are not cheap and many will not justify the purchase cost. I would include myself in this category, but the knives are so good that I still bought one.I use this knife for pretty much all food preparation. Definately my go to knife

Well balanced knife

I have a set of Global knives, as well as several good knives from other brands. I have been searching for the perfect veg chopper -- one with enough heft to take on root vegetables, but something that stops short of a meat cleaver. This fits the bill. It has great balance and a substantial,blade, but is light in the hand. Global knives maintain a razor sharp blade if you take care of them. Take note that they have a unique blade -- honed on just one side -- that requires a Global-brand pass-through sharpener...unless you get your knives sharpened professionally or are very good with a whetstone.
