After being initially impressed with my GreenPan pans and then subsequently quite disappointed, I was, at best, cautiously optimistic when I purchased this HexClad pan. After a few uses, though, I can confidently say that am beyond impressed! As HexClad advises, it is (seemingly) important to season this pan first. I actually seasoned it like I would a cast iron pan, with an oil rub and an hour upside-down in the oven at 350, but I am honestly not sure it made much of a difference beyond HexClad's recommended method. Anyway, after the first use, I was still in the "cautiously optimistic" zone, but every subsequent use has only gotten better! I think what ultimately sold me was the ability to scramble eggs, slide them right out of the pan, and then immediately crisp up some cooked white rice with zero sticking when I made pineapple fried rice. My most recent dish was mushroom risotto, which involved sautÊing, toasting, deglazing, simmering, and mixing in cheese, all of which also occurred sans sticking. These pans are the real deal. I purposely purchased the 14" hybrid pan first, because it is not included in any of the sets, so I figured, worst case, I would be out the money for just that pan, and I still cook enough high-volume dishes to adequately put it through its paces. Ultimately, I highly recommend the HexClad line, and as soon as I finish writing this review, I will be purchasing the President's Day set that includes almost all of the remaining HexClad pots and pans. (We were going to put it on our wedding registry, but, you know... it's on sale now, so... why wait? Haha.) Anyway, 10/10 recommend. Happy cooking!

A while back, I mentioned to my wife that I might try Hexclad some time and she went out and ordered me one because she's wonderful. That's probably why I'm so disappointed in this pan's design. The handle design is awkward. It bends downward and doesn't sit above the rim like every other decent pan. The concave design of the surface, which, I'm told, is to keep the pan from warping (yes, they warp their pans to keep them from warping), breaks a bit of rule for pan design. You won't find any serious, professional chefs using these. Finally, dealing with the service team has not been pleasurable, to say the least. It took a remarkable degree of persistence to, ultimately, get a replacement for a pan I really no longer wanted. Overall, I'll probably go out of my way to not use it.Did I mention how much I dislike the handle design?

The nonstick material delaminates with record speed with normal use. Perhaps itâs not dishwasher safe as advertised. The quality of the pan does not justify the price. Itâs not remotely as nonstick as an Allclad pan or a Hestan pan. The design is a compromise between a nonstick and conventional pan. As such it functions poorly as either. The diamonds seem only to hasten the delaminating of the nonstick coating. I canât imagine a real chef or a home chef recommending or using these. They are a massive waste of money.

Itâs not that I donât like this skillet, itâs a great skillet thus far; Iâve had it less than a month and used it almost daily. Itâs a good heavy skillet with great non-stick properties but so far itâs just another âgood skilletâ. I havenât found it to be any better than my other âgood skilletsâ certainly not enough to warrant the price. I have yet to use metal utensils nor has it been in the dishwasher, thatâs not how I treat my âgood skilletsâ. There is some discoloration happening around the rim as well as inside the skillet, I hope this is normal. Perhaps being able to use metal and put it in the dishwasher will push my star rating a little higher but so far I havenât found anything that makes it spectacular. I may change my mind as I use it more but all things ... MoreItâs not that I donât like this skillet, itâs a great skillet thus far; Iâve had it less than a month and used it almost daily. I have bought non stick cookware in the past without the same quality. Super happy and plan to buy same product for both out our home kitchens.I have done 24 years in the Army and retire a few years ago. Is there any way we can get a military style discount on our next purchase?Check out breakfast_with_dave and I can start adding Hexclad to our Instagram. Absolutely love this pan.Thank you for this consideration!

Then, in the early 90s, with the purchase of my first home, I purchased a set of Calphalon anodized aluminum. Back then they werenât made with non-stick surfaces but I was perfectly happy for many years - still am -theyâve lasted decades. I also have a great stainless pan as well as a 10 and a 12 inch cast iron pans. Then early in the pandemic, along with my new subscription to NYTimes Cooking app, I was on the lookout for a non-poisonous, non-stick pan. COSTCO delivered with the Gotham non-stick 10 and 12 inch set for the low low price of $40. I used these pans and my mother-in-law was so impressed I sent her a set for Christmas. Fast forward 9 monthsâŚughâŚthe coating started to chip. Shocking. Worse, the pans started to retain the taste of dish soap! Yuck. All the rinsing in the world didnât remove the taste and this would transfer to the food. Gross. The hunt was on again. Additionally, I am in the middle of a kitchen reno and am taking the leap into induction cooking đŹđŹđŹ, so, not only non-stick but induction compatible. I found a pan made in Scandinavia (so it must be good-right?!) and ordered two pans. They worked GREAT, no need for plastic utensils, cooked food well-still had to keep the temps in the medium heat range but for the most part solid pans. BUT-in a couple of months I had the same dish soap flavor issue. đ˘Fear not! Enter HexClad! Iâve had this pan for a few weeks now and it couldnât be better. It is the perfect combination of cast iron, stainless and non-stick you could ever ask for, I use it for everything! The fist night I cooked frozen chicken nuggets and broccolini! Perfection! I know, I know chicken nuggets, what can I say. I love this pan. Iâve used it for veggie tofu stir fry, fried eggs, bolognese, salmon, pork chops, pancakes, BACON! I rarely use another pan now except to boil noodles - This pan cooks BEAUTIFULLY, caramelizes onions, meats, makes eggs, over easy with crispy edges! Can be used above medium temps, goes in the oven, cleans itself. Okay, you still have to use water and a touch of soap and maybe a sponge but I promise you, the flavor of dish liquid will NOT transfer to your next meal. BUY. THIS. PAN. NOW. You will not be disappointed. I am saving my pennies so I can purchase a full set AND the new bbq grill pan.
I've been in the food industry for over 24 years and an executive chef for the last 12. I've never seen Gordon Ramsey back a pan or knives, so I was intrigued; could there finally be a durable pan that would last?! I wanted a pan that would hold up, that would last! I watched many online reviews and finally decided to purchase a 12in pan and wok. I watched all of the videos to ensure proper seasoning and use. I made social media posts as I attempted to use the pans and learn. Let's be honest, there shouldn't be a huge learning curve when using a frying pan, expecially for a veteran chef. After 90 days, I've had enough. These pans give a decent sear, but are NOT NON-STICK. Not even slightly non-stick. After 90 days, I've had enough. These pans give a decent sear, but are NOT NON-STICK. Not even slightly non-stick. The company refused a refund/return and claims that this does not fall under a warranty claim. That state "Unfortunately our warranty only covers defects that affect the use and functionality of the cookware.". I'm pretty sure if you claim that the pan is non-stick and it fails to be non-stick that there is a defect that affects the use and functionality of the cookware!
I almost returned this pan thinking it was too big and also shallow and questioned what would I ever use it for. Well, I decided to go ahead and use it and SO glad I did! It is my new favorite pan. It holds so much. I can cook all my chicken in one batch at same time - and it browns up nice with only a little oil. You can cook/saute a bunch of vegetables - all at one time! Lid is big/tall/deep but also really nice addition and it has a vent. The pan handles don't get hot. Cleans up really easy. Directions say you can use metal tools in it - still apprehensive to do so - gentle if I do - but awesome! Love this pan and wish I could gift one to all my friends and family! It and the lid are large but I love em!
It seems to be a good, durable pan at this point, only with a few weeks of use so far. I am curious to see how long it will last. Definitely beautiful and I like the bottom being non-stick too. You definitely have to season the pan and then it keeps getting better and better as advertised...so far...than my first try with it with eggs, which would not slide easily without a spatula. Nevertheless, after several uses and sometimes just wiping the grease out of the pan when it isn't really dirty, the eggs slide around pretty good. It sears meat great and cleans up easily to looking brand new, but again this is only a couple weeks of use. Many pans I have used that advertise durability if properly handled, which I do, no metal utensils ever, no dishwasher...and they have not lasted much beyond a year, so I am interested to see how long this pan goes. The sides are a little steep for flipping food easily, or rather I personally find it a bit challenging in flipping food to cook the uncooked sides, but it's good for regular cooking with utensils. The heating up seems a bit slower than other pans I've used, maybe thicker metal. I cannot bring myself to use metal utensils with it even though you say they can be used--feels too wrong and I want it to last for a long time, so I am handling it with more care than it may need. Photo is first try with eggs that stuck a bit (but cleaned up easily) but now they do not after seasoning for a couple week and often just wiping out the pan.
This is a beautiful pan. I would really like to see a Smaller version of this. It takes up so much space on my stove, it is hard to put other pans on the stove with it. Would also like a not so tall lid on a smaller version too. I made small omelets in it first. It really does need oil to keep them from sticking. I did not put enough and they all stuck to the pan. Fortunately, they still turned out good. The pan is super easy to clean. My goal is to have a set of these pans and get rid of my other pans. My hope is, these will be the last pans I will ever have to buy. I have tried so many pans through the decades and have not been happy with any of them. Please come out with more pans with the buffet handles. They are easier to store in cabinets and do not take up so ... MoreThis is a beautiful pan. I think for seniors smaller pans are much easier to handle and clean.
