Santoku knife with a blade length of 14 cm from KAI's Shun Premier series. 33-layer blade with a hard VG10 steel core and softer steel sides. HRC of 61. Handle in Pakkawood with walnut character. Small Santoku knife that with its high blade is very well suited for both vegetables, meat and poultry. Shun Premier is, like all other knives from KAI, a craft. The blades have a core of the hard steel VG10 that is hardened to an extreme sharpness, hence the warning text on the packaging, "Use at your own risk". The core is then surrounded by 16 layers of a softer steel on each side, resulting in a series of knives with 33 layers of steel. Unique to the Shun Premier series (and many other series from KAI) is that all hammering and processing of the blades is still done by hand. The knives that leave KAI's factories and are processed with these techniques are completely unique. You always get a knife that is not like any other.

I did not realize before that slicing and cutting can be so fascinating and breathtaking. I feel no resistance when hard vegetables like carrot or beetroot are sliced with this knife. It is so cool that I just can not stop cutting.I have never had such an experience with a knife. I love it!

If you are skilled with knifes and cooking a lot ,this is definitely a knife you should have in your kitchen,i bought it for my husband and he is more than happy with it!

I did not realize before that slicing and cutting can be so fascinating and breathtaking. I feel no resistance when hard vegetables like carrot or beetroot are sliced with this knife. It is so cool that I just can not stop cutting.I have never had such an experience with a knife. I love it!
