Waited 3 weeks to get this along with my Kamado Joe Grill. Significant breakage in each. That is unaccepeptable. Not I get to waste hours dealing with its replacement. I sure hope its not broke. The packaging is that of a greedy company who wont spend the money to properly package their goods.

I had been using cast iron to sear steaks and veggies for many years and thought it was the best sear I could get without risking flareups burning the food and imparting a bitter taste. I was really surprised at how much better the soapstone turned out to be for searing food. Everything I've tried searing on this has turned out far better than I expected and far better than any cast iron could ever achieve. something about the soapstones' thermal properties makes the sear perfect as if it knows just the right amount of heat to conduct and radiate to the particular food item on it for the perfect Maillard reaction and never simply burns food like cast iron tends to do so often. I've never had anything flare up on it even though I sear with it being directly over ... MoreI had been using cast iron to sear steaks and veggies for many years and thought it was the best sear I could get without risking flareups burning the food and imparting a bitter taste. Don't expect this to behave like a teflon coated pan, but rather like a good stainless steel one where when heated behaves as a non-stick surface for most foods.I do pre-heat it for ~30 minutes prior to using it and sometimes even longer than that and directly over the coals.Yes Kamado Joe had to send me 2 soapstones before they finally sent one that didn't arrived cracked in two, but I can understand this issue as this type of stone is super brittle and has to be handled with great care. When cooking with it, I rest it on one of the half moon grates so it has even support across its span.As a science and physics major, it seems to me that the main differences between a soapstone and cast iron, regarding their searing properties, are that cast iron conducts most of its energy but radiates relatively little of it while soapstone radiates most of its energy in the form of black body radiation but conducts very little of it which would explain the differences in searing qualities and making the soapstone a far superior material for searing food with radiated heat without charring it to death with conductive heat.

This is a great alternative to the cast iron cooking for steaks and burgers. Cooking on this stone creates the great crunchy sear on the outside but still maintain the tenderness in the meat. Great for making smash burgers too. Make sure to use the stainless grill to support the stone if to stabilize the stone when making smash burgers. Great for cooking chicken thighs with the skin side down to get that crunchy skin! The meat cooks in it's own juices so the flavour is maintain too. Meats remain tender and juicy. Easy to keep clean too. It's heavy, ~25-30lbs but what would you expect from a natural stone!
Only used it twice, once for salmon and once for smashburgers. The burger were the best my family has ever had and the kids are 20 yrs old. Aaaamazzing, so juicy, unbelievable. Not sticking, nothing. Worth the money just for burgers plus they are pretty. Just buy it, promise. Sorry, did not take photos
The edge on one side of the stone is sharp / unfinished, very rough and must be careful when handling. It has a small lip that will cut your hand. The other issue is there are several “divots” large enough to really catch various food bits and grease making it harder to clean than the rest of the surface.Stone works, kind of hard not too I guess, but for the price I expected a better finish than what’s presented.
I used this product for a few weeks with no issue and then realized it had cracked.Super disappointed this happened. It was not dropped or abused in any way.It was used according to the instructions. What are the chances of getting this replaced ?
My first use of the soapstone was for New Year's Day supper. Slow cooked two small pork tenderloins. I've never had better. Cooked on low temperature and took no time at all. Clean-up was a breeze. Looking forward to many more meals using the soapstone. Kamado Joe is an excellent cooking machine as an over or open flame, smoking or grilling.
I'm not impressed with the quality. The entire outside edge was ragged and very sharp, I had to use a diamond file to carefully clean up the edge. I can't imagine how this stone got through quality control, unless of course, there isn't any. For $120 I expect quality workmanship.
I have had my soapstone for 1 year and have really enjoyed it extending my toolbox while playing with my KJ! I would rank it just below the Joetisserie & the new basket kit (completely awesome!) as my 3rd favorite accessory. My kids line up for the perfect smash burgers it produces and I use routinely for salmon and also makes for great seared scallops. As you can see from the picture, perfect sear marks and (mostly) non-stick...You should season with olive oil prior to adding the fish and then you are fine. Relax and give it the right amount of time to heat up and you will see perfect results every time!
