My girlfriend took me up on a years old offer to buy her a KitchenAid mixer and had it in use making holiday cookies long before the holiday so I wanted something to put under the tree. We try to eat healthy, have a spiralizer and like "zoodles" so I thought the Vegetable Sheet Cutter would be another way to add healthy vegetables. I had also wrapped up some vegetables as "presents" to go with this so she tried it out on a zucchini and after a little fiddling said it worked well. We didn't actually have an intended use (part of a wrap) so on a whim she cut it in pieces and dehydrated the thin sheet zucchini - with no added anything our playing has yielded a rival to kale-chips. So I've had the spiralizer attachment for a few years and use it pretty often, but when it comes to making Veggie Lasagna, I was stuck making a difficult slice with a sharp nice (which resulted in "noodles" that were too thick) or my mandolin, which I routinely cut my hand with because you can't use the gripper thing that comes with it when slicing a long vegetable like a zucchini... it also often gets jammed up and creates messy/uneven noodles. This attachment goes on my mixer easily and makes PERFECT noodles! I purchased stnad mixer artisan and 7 kitchenaid attachments including vegie sheet cutter several months ago. When trying this first time, the food holder and food skewer broke off. I don't even know where to get these replacement parts. Does this mean that I need purchase the whole vegie cutter attachment again? The week plastic skewer does not seem to hold heavy vegetables well. For overall skewers of even other attachments, they don't seem to stabilize the tangential force well in place. If you can either let me know where I can get this part or send me one, it will be appreciated although this material will still may be the same level of rigidity.

We adore wraps but don't want the extra carbs. Enter the lovely long sheets of "veg" that have taken wraps to a whole new level. Even sweet potato, cut and brushed with EVO and thrown on the grill pan for a quick sear/heat/soften makes the best wrap imaginable. Take that burger, a bit of cheese, fresh sweet pea shoots and hummus and wrap it up in the sweet potato wrapper and you'll gladly give up that carb heavy bun! Despite the challenge, I used just the top solid part of the squash and made an incredible butternut squash lasagne filled with coasrely chopped oyster mushrooms in a mornay sauce and finished with fried sage leaves and fresh Grana Padano...can I honestly say it was more satisfying than my homemade lasagne noodles? Yes! This is a game changer and I'm looking forward to playing and creating countless other beautiful and flavorful recipes with the new attachment.
We were very excited to use this attachment and have been very satisfied with several of the other attachments we use, some quite frequently in a professional capacity. Unfortunately this one didn't make past its debut in the kitchen. One of the teeth broke shortly in to its duties, and another after giving it a second chance with fingers crossed. I'm a chef, not an engineer, but I probably should've seen it coming upon unpacking. While this was a very thoughtful gift for home use having me draw up cool applications in my head, I am left disappointed yet hopeful that there will be an affordable (and dependable) vegetable sheeter in the future,
I bought this because my daughter loves hers. I am interested in making vegetable sheets for lasagne in an effort to eat less carbs and pasta. I think once I get into it, the zucchini slices will be awesome substitutes for pasta lasagne sheets. Just wish it had co.e with more detailed instructions and some recipe ideas for people like me who need some inspiration. Very sturdy looking machine and well packaged with very fast delivery, alas as yet not used. Can't rate the performance yet as I haven't tried it, but I think the performance will largely depend on the size and type of vegetables used.

Make sure each end is cut flat. Insert a prong on either end, centered as closely as possible. Then attach 1 prong and slide the rod through. Spinning/cutting will be uneven if you add the vegetable after the prongs are attached. So far, I've made zucchini lasagna from scratch and ricotta rollups I call stuffed 'zucchotti' (instead of manicotti) with my homemade fresh tomato sauce.
