This is not your ordinary Santoku, foremost, it’s a Kramer, from his Meiji Collection; made with left-handers in mind too... but it’s also got a nice point to the blade, unlike your classic Santoku, which makes this one quite versatile; able to use with prepping an entire meal without changing out knives for different jobs (from herbs, to veggies, and even proteins). This one will certainly become a go-to in your kitchen, as it has in mine!

Bob Kramer knives are truly works of art. The Meiji 7" fine edge santuko is another fine example. One hundred layers of stainless and nickel damacus protect the FC61 core steel creating a rich and interesting pattern design. The traditional Japanese handle is Charcoal Pakkawood, adding to it's elegance and ergonomic design. The half bolster features a nice curve which allows for greater comfort and permits using the full blade for cutting and sharpening. Double tapering keeps the weight in the middle resulting in perfect balance and less fatigue. Perfect design and gorgeous as well!

Actually a Bunka, but we'll let it slide

I purchased this knife as a gift to myself and with the price reduction it had on it plus an extra 15%, I just couldn't pass it up. It glides through EVERYTHING as if it weren't even there. Gorgeous blade, love the oversized handle as I've large hands; and it's pretty lightweight considering the size. Well done Bob, Zwilling, and all those artisans in Japan. 10 out of 10

Another Bob Kramer Beauty

This 7 inch Santoku part of Bob Kramer's Meji design collection is a treat to use. You can feel the razor sharp edge easily slice through fruits, vegetables and meats. Designed with a FC61 core and covered in 100 layers of alternating nickel and steel to create the damascus pattern this blade will retain it's razor sharp cutting edge use after use. The handle provides a comfortable grip and the expert forging give a durable feel.

Designed for right handed people
23 April 2022

Beautiful and effective. I'm left-hand and noticed this knife is probably made for right handed people because the handle shape is asymmetrical. I can still use it easily enough and I love it, so I'm keeping it. I do wish they made a left handed version

Legacy & Quality

The Meiji line is as tough as it is beautiful. Made of 101 layers of steel, and ice hardened in the process, this tough knife will work hundreds of menus before it needs to be sharpened. The patterned blade is reminiscent of Damascus layering. The bright stainless is eye catching, and I am always happy to pick this knife up for any job. The handle is a little longer than traditional handles. Great for larger hands or folks who don't use a pinch grip. This 7-inch santoku has exceptional balance. The wider tip, typical of all santokus, gives me a little play for fine slicing and shredding.

My Favorite Daily Go To Knife

Honestly, this is the most amazing general purpose chef-like knife available today (imho). A great knife is defined by first how it feels in your hand and how easy it is to manipulate and this checks those boxes. It maybe clique but it's more than any other I own (BK Carbon, BK Damascus, Miyabi's, Shun's, Masahiro's, you get the drift) feels like an extension of my medium-size hand. The balance is perfect...just in front of the bolster making it slightly blade bias. The blade is stiff (ideal) yet highly nimble. The Damascus pattern is stunning yet understated (not acid etched). I only have one wish that the future "upgraded" version either have a SG2 or Blue Steel core. This knife convinced me to purchase the entire collection of BK Meiji and made me fall in love ... MoreHonestly, this is the most amazing general purpose chef-like knife available today (imho). As always your mileage may vary so please do yourself a favor and hold them and compare them against the other collections of BK before you decide. Stay sharp!

Uniquely Kramer
14 April 2020

Meiji is a little different in design than previous Bob Kramer knives but none the less spectacular! It has the wide blade design Kramer is so famous for in his hand made knives which makes cutting large fruits, vegetables or piles of food easy. It has a core of FC61 steel which is incredibly durable, very chip resistant and is surrounded by 100 layers of steel in a very unique Damascus design. The handle is made from a durable wood and is curved to almost mirror the palm of your hand; fits like a glove. Beautiful, durable and will be a complete work horse in your kitchen.

interesting design.....great knife

This is such a uniquely designed knife. The handle is like nothing Ive ever seen before. It is ergonomic and comfortable to hold but with a cool look. The blade is very sharp. It goes through a double hardening allowing for a very strong very thin blade that is chip resistant. Like all Kramer knives it is well balanced. I love the Kramer mosaic pin in the handle. It really shows the attention to detail and the craftsmanship.
