I ordered a pre seasoned 12 inch pan and that step came in handy for saving time, otherwise it would have taken several hours and have it turn out properly. (If you should order an unseasoned pan, go online to look at the proper steps to take to pre season high carbon steel pans). My only very minor boo-boo was that I ordered a 12 inch pan and it's just a skoosh too large for a standard electric stove top burner. However it's perfect for a standard electric oven. Be sure to look up all the steps needed to pre-heat and then use this type of pan. Two key features to consider in using this pan: One, is it can withstand up to 800 degree temperatures F. without emitting poisonous fumes like Teflon coated pans and two, with easy proper care it will last well over 50 plus ... I expected to receive a lightweight carbon steel product similar to my 14 inch carbon steel wok (not a lodge product). Very heavy weight, so much so that i have a suspicion that is is just another cast iron, not carbon steel. product. Furthermore, the sufface where the food goes was not polished to any kind of smoothness, so I used my tools to do that.

Thank you for that!Secondly: The pan itself though… I would say upgrade to the De Buyer instead. The surface on this pan is extremely gritty. I’m not sure if that’s Lodge’s way of showcasing the rugged heritage in their products??? But it’s a trend I’ve noticed in their lineup. Either way, it’s a nightmare to cook on, despite multiple re-seasonings.Lastly: The pan side walls are not high enough. I could only safely scramble 4 medium sized eggs before pieces of them started getting knocked out.

I've never had the joy of using any cooking tool more useful and easy-to-live-with than Lodge's Carbon Steel. It can take virtually any temperature. It can cook anything from tender fried eggs to flaming stir-fry. It can sear steak well enough that I see little need to switch to cast iron for searing beef or pork or any other meat. So glad to have purchased the 12" and the 10". Simply cook often to season, or, occasionally set in the oven with a thin sheen of oil wiped all over it to season it while cooking other things. Chain-mail to clean it = no damage to the seasoning, no scratching possible, results in a beautifully maintained kitchen necessity.

You really get it non-stick after cooking some fatty foods such as skin-on chicken thighs, pork chops etc. a few times then it's ready for eggs.The handle is long enough to keep it cool to the touch for a while but it's rather uncomfortable, that and the Lodge pre-seasoning are the reasons I give it 4 not 5 stars. I'm stubborn, I WILL get that pan non-stick but will stay with Lodge in the future.
Shipped poorly, item arrived in a large box about 3 times the size of the pan, and wrapped in one sheet of construction paper like material. The pan now has the slightest dent, and the seasoning has chipped off the pan. I won't return it because I can reseason it, but the shipping material is frustrating nonetheless.As for the pan, the seasoning is abnormally rough. I'll be taking an SOS pad to it soon. A little heavier than i expected, too, but seems sturdy. Probably 4 stars if the shipping hadn't damaged it. It does feel good in the hand and I'm excited to use it heavier in my rotation.
Bought carbon steel skillet this 02/04/2022. Does not sit flat on a cooktop thus anything like bacon cooks in the center but not towards the ends. Talked to lodge and they send me a replacement and straight from the box I set it on a cooktop and it is the same. My older lodge cast iron skillets I was attempting to replace as this is lighter in weight this all sit flat and cooking is uniform. I have returned it. I will purchase one as soon as lodge manufacturers them with a flat bottom so they do not rock and cook uniformly as I think they have potential to be a great product.
The description is somewhat misleading - it isn't a cast iron pan is it a carbon steel pan. Was concerned that the wrong product had been shipped. For a pan that was supposed to be pre seasoned it was not as good as I had expected but I am sure it will get better with use
Easy to clean, better non-stick quality than any supposed "non-stick" pan I've ever owned. Lighter than cast iron but works as well. I have both 8 %26 12-inches and sent one as a gift. I prefer the 12" because of size and versatility but both work equally well. A real keeper, my "go to" pan.
