I love this knife best from my small collection of Shun, Wustof, Henckels, and a few cheapies. It is lightweight so appropriate for smaller hands or all day use. It sliced through a tomato without any resistance, along with onions and made perfect tempeh cubes. I might get a set of knuckle guards to wear just as a precaution as I acclimate to a sharper knife. Do not hesitate. it is stunningly beautiful with details you will rarely find except from the Miyabi line. I also have my eye on the 8” Nakiri, as well as the Artisan line. A+

I bought this knife to extend my collection but also to use at work almost everyday. At first I was worried it would be too delicate but it cuts and chops anything I need it too. I’m a full time chef so I’m using this knife 60 plus hours a week and it never fails. This knife gives you all the tools you need to continue to learn new tricks while just overall allowing me to be the best knife work chef I can be. I finally decided to invest in a nice chef's knife. Tried out several at the store, and the Kaizen 2 had a really great feel. The knife is surprisingly light with a thin blade that is primarily triangular with a slight belly. The balance point is right at the junction between blade and handle. I grip the knife with my thumb and index finger on the blade and it feels very comfortable in my hand.Tried it out while prepping a few meals over the past couple of days and I'm loving it! It seems to hold its edge well, though this will be tested more in the months to come. The thin blade passes easily through foods, and its Damascus pattern is beautiful to boot!I'm very pleased with the purchase. If you're considering buying a knife, give this one a try!

From the handle to its blade, this has to be one of the best knives I’ve ever invested in. It’s very lightweight, but still has enough to chop up your root veggies with ease. It’s also a very inexpensive, beginner friendly knife. Perfect for at-home cooks and professional chefs as well! I’ve heard nothing but great things about this knife and I can vouch for those words too. This is the only knife you’ll ever need and worth investing some maintenance for it too. I would recommend this knife to anyone who loves to cook!
I love how the handle feel in my hand. The handle does not require as much maintenance as a natural wood which is something that I prefer. I love the how the blade feel and how it cuts through food, It came incredibly sharp! There is nothing on the knife that feels rough, cheap, or neglected. I LOVE the Damascus pattern on the knife as well. I will be purchasing more Miyabi knives are discovering this well made knife. I hope to be a customer for the years to come

I work in kitchens, I've used several different knives from the Henkels, Wusthof, Sabatier, Dexter Russell, and even cheaper brands like Thyme and Table, Farberware, etc. I like the heft of the Wusthof, but I've used Torjio as well and I loved the edge retention and how comfortable both of them were. The Kaizen II has both; decent heft in the hand and a surgical like sharpness on the cutting edge, and it looks good. The balance hits right around the beginning of the bolster (personally it feels heavy in the rear because I use a pinch grip), but even though it's just a tad heavy in the back I can still easily tap chop for fine cuts, using a rocking motion is effortless since it has that weight. The handle is a great medium thickness for people who don't like a overly thick/bulky handle or too small it's not going to fit right, and I've got large skinny hands. Wouldn't recommend using a steel, definitely a ceramic rod or ceramic reinforce rod for honing. I'd say it's a great entry knife for people looking to get into Japanese knives, in my situation it's my first "real" knife. What seems to work as far as care is if you cut something I'll wipe mine off with a clean rag if I'm really busy but if I have time I do go back and wash, sanitize, and rinse as well as dry it off really really good. I would recommend this knife to anyone.
This is my first adventure into the more expensive side of knives and I am thoroughly impressed. This knife has a comfortable grip, balanced, and is lightweight. My previous knife set, even when new, tore meat instead of cutting it. I even sharped those knives many times and they still could not make a clean cut. This knife has been amazing and has made cooking even more fun and effortless. I look forward to adding more of the Kaizen II knives to my set.
I cook daily for my family and derive a lot of pleasure from a well crafted knife. I began with clunkier German knives but find that I enjoy the finer edge and easier handling of Japanese knives. I’ve used MAC and Kan knives for the past two years and enjoyed them. This knife is a substantial improvement. It is as sharp as you would expect, but for me, the real difference has been the long, thinner blade balanced with a slightly larger handle. The balance point is perfect for using a pinch grip, just where the ebony meets metal. This makes knife work a pleasure, even the fussier cuts.

The Miyabi ripped through each of them like butter. Has an excellent hand feel (is that a phrase)? I have large to Xlarge hands and it doesn't feel dainty.And it's SHARP, not so sharp you have to fear the blade...and I'm sure with the quality of the steel someone could get it even sharper.
