It is absolutely beautiful, as are all things Japanese, especially those that have ancient traditions. I believe these knives were made in the same manner as Samurai Swords. Although, I have no intention of cutting someone's head off, just the thought of how old this forging process is puts me in awe. Very sharp. I'm not sure if this is a complaint but the Damascus pattern seems a little chipped or frayed on the end of the blade near the handle. However, it is hand made.

This knife meets all the criteria I expect from high-quality Japanese steel. It’s comfortable to hold and super light.There aren’t a lot of retailers where I live and I went to a shop expecting them to only carry German knives, was very excited to find this knife for only $30 more.

We are a vegetable focused family and I needed a knife to make all the copping required for our diet not to seem like such a chore.This knife makes cutting vegies such a pleasure. The edge is fine enough to get super narrow slices yet strong enough to tackle those pesky squashes. Stays sharp for a long time with proper honing.The damascus layering is really pretty and seems to create a slight non-stick property to the blade. Cucumbers and potatoes fall away easily.

Wow. So inpressed. I’ve recently recieved the knife as a Christmas gift. I’ll admit to some skepticism about expensive knives but this was fantastic right out of the box. I cut through meat effortlessly. I’m looking forward to the next few years of use.
I received this knife as a wedding gift and I must say it is not only the most attractive but the nicest knife I’ve ever used. Fantastic for chopping vegetables and so far after used for a couple months it is still incredibly sharp. The only thing it lacks I would say is a sheath or a carrying case for it. I moved some knives around in my knife block and made a spot for it.
The first time I used this knife, I knew it would become my everything knife, replacing my existing Henckels chef and santoku knives in my everyday cooking life. I am not a chef, but a very accomplished home cook. My knives are my pride and joy, preferring them over a mandolin or other means of cutting and chopping. I played at first, seeing how thin I could cut a tomato. Wow!This knife was a gift from my step-son who knows how much I love to cook.

If you liked the sharpness of the original Kaizen, but found the handle a little foreign, then it might be time to reconsider the Kaizen line. The handle and the bolster were beefed up to provide more feedback with a firm pinch grip. The 49-layers of steel are hand finished to an extremely sharp edge that holds. It has a double Damascus pattern that is stunning.This santoku blade shape is set at just the right angle so that when you are chopping the knife finishes the downward motion automatically.
I purchased my Miyabi Kaizen II 7” Santoku as a beginner. I tested it out in-store and fell in love with its balance, weight, grip, and precise cutting ability. This knife is razor sharp, and has a good balance of sturdiness and flexibility. Can’t wait to grow my collection!
