Got a great deal on this. The double bevel makes it less tricky to cut through sashimi. The handle is beautiful. The edge will maintain will but will take a lot longer to sharpen whenever I have to (which I think will be rare). The knife attracts a lot of attention on my wall rack when guests are over. No one is allowed to touch it, of course. The last time I had a friend over he offered to help in my kitchen, and when he was done with a knife he threw it into the sink. Luckily it was a cheap Cuisinart one.
