You won’t regret your decision, other than maybe getting the big brother Pro Bronco.

Used B&B lump charcoal and some mesquite wood chunks for the fuel. Used 3 Weber charcoal starter cubes to get the fire going. It did not take very long before I had plenty of heat. Wanted to cook a medium size brisket so I adjusted the temperature to 225 to 250 degrees. This smoker was amazing at good it held the temperature! In fact after putting the brisket on, I mowed and edged the lawn. Had a Traeger that required constant watching and still did awful at temperature control. I wrapped it in red butcher paper at 165 degrees. After 6 hours my brisket was at 205 degrees. Kept it set to see how long it would maintain temperature. 10 1/2 hours before I starting losing heat. Put it in my cooler for about 1 1/2 hours. Came out great! Next project is ribs.

I bought this smoker about 3 years ago and still no issues. It is literally a set it and forget it smoker. It holds temp better than a pellet smoker. If you load the charcoal basket correctly, it will burn more than 16 hours. This smoker has a decent set up to grill also. The charcoal basket can be placed on top of the heat deflector to allow for searing and grilling. A couple of minor negatives. Some of the units have a defect in the air intake. The intake is in 2 pieces and some of the units dont fit tight. This was supposed to be corrected in manufacturing...I called about it. Its still not a big deal. There is a small cooking area. It will fit 1 rack of ribs or 1 trimmed 14 lbs brisket. But ribs can be hung (I dont think this works with this smoker tho...end ... MoreI bought this smoker about 3 years ago and still no issues. The lid wont close if youre smoking a turkey but there is a secondary lower rack setting that works. The temp varies somewhat significantly from the front to the back but its easy to rotate the rack during the cooking process. Most people dont know that you can actually smoke beans or additional items on top of the closed lid. A large kettle lid will fit on top of the smoker perfectly. A ridge can be seen on top of the lid and a kettle lid fits around this ridge. Pan of beans on top, add a kettle lid and turn the exhaust on the kettle lid opposite of the bronco exhaust. Overall its a great smoker! Has really increased in price from a few years ago.

Delivered safely, easy assembly.Used high temp exhaust RTV on all bolts to prevent seepage (commonly discussed oh the FB forum and most build videos).Shimmed the axle mounting plates with 2-3 washers so the axle is not “arched” in place which causes significant wheel camber, making the inner edge of the wheels dig into my deck. Shimming also allows the axle to slide out, making it easy to service or change to the better wheels later.The steel wheels are just dumb with sharp egges. The “accessory” rubber wheels should be included at this price, would cost them little, probably nothing to include them. Very pleased with initial reports, reviews, and overall reputation of the Bronco, so I bought one. On delivery and opening I found the thermometer had come loose from its styrofoam packaging pocket in the factory box and was crushed. Annoying but not too worried as that would be relatively easy to correct with a claim to OJ's. However it was when I got to the assembly phase that manufacturing QA of the component parts reared its ugly head. The unit is basically two halves joined by metal screws through holes in a flange of one side into nuts welded onto tabs that were then welded onto the second half (See picture). Impossible to do so because these "nut" tabs were bent down at an extreme angle. Okay so I'll seal with RTF if the other 4 will install...then I came up on the Dead End to assembly and the reason for my return; The flange holes on the opposite half didn't line up with the nut tabs. Thankfully the retailer I used to purchase had no issue refunding my money. I ordered a replacement in hopes that this was a one off issue. Unfortunelty its a bit of a rather large crap shoot as the Bronco apparently has a reputation for poor manufacturing QA. Not even sure if a replacement will be any better, but I've crossed my fingers...

Moving up to serious smoking

Received Oklahoma Joe's Bronco Drum Smoker as an early birthday gift, but weather has been uncooperative to get things going. Moving up from my small homemade smoker to do some serious amount of ribs and brisket s at same session. Assembly time took me 2 hours. I am a perfectionist when it comes to doing this task, may take less time for you. I suggest having a second person help with moving box and flipping drum for assembly. It is well constructed and assembly instructions are precise. Constructed out of heavy gauge steel with porcelain coated inserts this should give me years of service. Leave time for a first time empty ""seasoning" burn of 2 hours before inviting friends over for a cookout. Get a few bags of natural lump charcoal and some meats! After having two 55 gallon drum smokers, and my gas grill get smashed by a massive pine tree that fell, I've been without a BBQ for a while. Did some research, and Idecided on the Bronco, since it's a familiar platform. I literally just picked this up today, and brought it home. It was purchased online through a third party/box store, and delivered to a local store. It took two weeks for it to get in, and when I went to pick it up, the bottom of the box was damaged. Poor shipping on the box store's part, no fault of OklahomaJoe's that I can tell. Since it was just the cardboard, and a small bit of the interior Styrofoam that was busted up, and the damage didn't seem to extend to the product itself, I took it home. Upon assembly, a couple of the holes which mate the bottom half of the barrel to the top are too close to the body of the drum to allow use of the provided washers. The interior attachment points/threads were not welded in straight, and made assembly of the two halves difficult, but we got it done. The next issue came when attempting to put the wheels on, as the axle just so happened to be in the bottom of the box, attached to that damaged piece of Styrofoam.....it fell out at some point after the box was damaged. After a call to the store it was purchased from, they're working with me on a replacement, and here we wait.Overall, not having the ability to use it yet, I'm going to call it, just okay. The guage of the steel used in the body is quite sturdy, and much heavier that a 55 gallon drum. The stainless, and ceramic coated parts seem well built, and the packaging was great. Once we can get the replacement axle, complete the assembly, and give it a few runs, my opinion might change.

First off, UPS must hate delivering these grills, so if you can find it locally, I would suggest that. Once I got the grill, it went together really easy and everything fits perfect. I took the advice of some other reviews and used lavalock during installation to seal everything up. After 8 years of using Kamado grills, I know how to run airflow, but I was shocked at how effective this smoker is. I started with a short cook on a lamb leg, then tried a little longer cook on a pork roast. The temp control was simple and easy, and I ended up with plenty of charcoal left over. I bought this for portability, as my Big Joe III is anything but portable. The Bronco is heavy, but nothing one or two people can't load in a truck. Bacon explosion, pork loin, brisket, a second bacon explosion (because there was still charcoal left after 16 hours of the brisket. I followed the advice of a YouTuber, and loaded the charcoal basket to the gills with Jealous Devil XL briquettes, and it went 20 hours before the temps started tailing off. An easy disassembly while hot, reload of the basket and 50 wings at a time fit on the grate. Everything turned out amazing! The brisket was one of my best ever, if not the best. More smoke than my kamados can muster and all the same control. The Bronco is a fraction of the price of a kamado, and smokes on par, if not better. Grilling, I'm not so sure. I have experimented, and have trouble getting above 350-400. I presume I could get more temp out of mesquite, but the construction may not stand up to 800-1000 like a kamado.TLDR: I love the results from this grill and it might be my go-to from now on.

To Bronco or Not?

Just received Bronco. Have not cooked in it yet. However, like other reviews I can attest to the drum not lining up and one of the screws stripped. I was able to repair. Don't use a battery powered drill with the screws included. The head of the Phillips type screw strips easy because of poor material it is made from. This is typical of China made products. However, like other reviews I can attest to the drum not lining up and one of the screws stripped. I was able to repair. Don't use a battery powered drill with the screws included. The head of the Phillips type screw strips easy because of poor material it is made from. This is typical of China made products. Based on other reviews I believe it will cook well but with the ability to rust because of the metal used in fabrication I look for it to last maybe 3 years. I have seen these advertised for $449.00 and that's way overpriced. This has the look and feel of $149.00.
