The time had come t buy some more and I shopped according to handle not realizing I had the Pro series before. However, I believe these to be superior on induction ranges because of their aluminum base. Something to note: Upon first use the base oxidized and drips from cooking would not come off the sides. I looked up online and it's safe to use Barkeepers friend one the outside of the pan. As soon as I did this, everything was like new again with not trace of oxidization. In hind site, I may have bought the pro just to eliminate the extra care required.

Worked great with daily use frying eggs with coconut oil for some years, then they started to stick. I called support and they recommended Bar Keeper's Friend to clean (invisible to me) residue on the surface. It worked great. I saw nothing about using daily, though it does have a microabrasive and has oxalic acid. That worked great for a few months, but then I noticed the surface was looking thinner with streaks in the middle where I would brush it, and the fried egg sticking worsened. My solution was to ony do scrambled eggs stirred up in a bowl with a little milk first, and using BUTTER as the oil, which I think might be the main reason for improvement, though haven't tried frying an egg with butter yet.
I was so satisfied with the CTX 12.75" Wok I bought from Scanpan, so I bought a second one; a 9.5" Fry Pan. I have to say I am very disappointed with this product because the outer layer (the metal part) gets darker each time I use it. The metal started changing its color from the first time I used it. I have many other very good pans that I have purchased over the years and none of them exhibit the darkening on the outer metallic parts like this as they always clean up! This 9.5" pan itself is great for cooking; cooks evenly and food doesn't stick at all. It's too bad I have to return it, and I hope company will exchange it for another good quality pan such as the 12.75" Wok I bought.
Bought this pan and the 26cm for my Mother who is mobility challenged and who really wanted 2 non-stick pans to make clean up easier. But they had to work on an induction hob and be lightweight which is a really big ask if you want good quality non-stick frying pans as most are really heavy. Mum had the Scanpan Fusion5 stainless steel pans before and found them way too heavy. Having used the CTX pans for a couple of weeks now she's really happy with them. Says they cook beautifully and clean up perfectly and are just the right weight for her to handle easily. And of course, kitchen warehouse were excellent as usual. Thanks!
I have only had the pan for a few weeks but it is in use daily, always for breakfast (eggs, sausage, bacon) and many other meals later. The bacon and sausage were the the destructive forces in the other "quality" non-stick pans. I find that I can fry the same items with this pan with lower heat and without the burning of the curing agents in the foods which caused sticking. To be honest, I might have made the other pans last longer by using lower heat as well but this pan is a much higher quality and the surface seems much more durable. The manufacturer says you can use metal utensils (which I will never do) but the other non-stick pans forbid the use of metal. The pan is quite heavy though, part of which is due to the solid steel and thick handle. I would have preferred a silicone handle,especially since the end closest to the pan can get warm/hot so you have to be careful to not grab it too close when very hot. Since the pan is on the heavy side you may do that to make it easier to handle. All in all I really like the pan although the price is pretty steep. I think it is worth it though. I fry eggs in it without grease and they slide right out, like the other kind will do at first and then not later.

The Scanpans are amazing. They cook with even heat and you can get a good char with them. The after cooking clean-up is a breeze. We liked them so much we actually replaced every Calphalon and All-Clad pan we had with similar sized Scanpans. We even replaced all the cooking pots with Scanpan pots. We have a professional cook-top, so it's important to have high quality cooking pots and pans. In our opinion, you don't get higher quality than Scanpan.
This is a wonderful. pan and the non-stick coating lasts for a long time. This was a replacement pan for one that I had for many years. It goes in the dishwasher and the old one stated to loose its coating one one side where I often cracked eggs. The coating goes over the top edge and this time I will be more careful not to damage the integrity of the edge.
