The Scanpan Professional Stratanium Nonstick Skillet makes the perfect crepes or fried eggs. Try whipping up quesadillas for the entire family, this skillet can be used to make just about everything. The Scanpan Professional Stratanium series is designed for connoisseurs in need of cookware that looks and performs beyond the ordinary. This exclusive design is based on the combination of hand-cast, squeeze cast aluminum, ceramic titanium, and the Stratanium nonstick coating, resulting in absolutely unique useful features. Scanpan spent over two years researching and testing to create the Stratanium nonstick system from the ground up. Stramonium consists of 5-layers in which hard particles and wave-like layers interlock to reinforce the nonstick layer. This makes Stratanium products have a 50% more durable nonstick than the previous Scanpan coating.

Loved these fry pans, but do not hold up any better than cheaper brands. Warranty is junk and I am disappointed by Williams Sonoma and the service I have received in the past. Representatives on the customer service line of Williams Sonoma were not the same level of service as in the past.

Bought the 8" Professional three months ago -- decided to move on from Teflon because I worry about that and have a steel spatula I use even when I shouldn't. (I'm an old guy.) I use it every day to make eggs and/or grilled cheese. (See above.) I always use butter or oil and it seems to get more "non-stick" over time, though it was just fine, but not perfect, to start with. This is a keeper. Recommend starting on low heat -- heats faster than cast iron but fries like cast iron -- crispy edged eggs if you want them and really nice grilled cheese. (Very minor scratch marks from my spatula -- not deep -- hardly noticeable.) Handle does not get hot -- can grab it without potholders. The pan is really a saute-type -- curved bottom, only 1 1/4" deep, unlike the photo ... MoreBought the 8" Professional three months ago -- decided to move on from Teflon because I worry about that and have a steel spatula I use even when I shouldn't. BTW, I'm really back on the Williams-Sonoma site to buy the 10". Just decided to share my thoughts while I'm here.

This pan is absolutely fantastic for cooking. I love it. I love it so much I bought another. It has held up well, but it is obviously not dishwasher safe (as was stated). The bottom of the pan has discolored, and looks damaged, after running it through the dishwasher. I still use it regularly, but now I only wash by hand.

First I got William Sonoma non-stick fry pan. In less than a year it was sticking. On all the non stick fry pans we used only silicone spatula and did everything you are suppose to do for non-stick pans. Then I got the All-Clad d5 Stainless-steel nonstick omelette pan. I loved the shape and size of the little omelette pan but it was sticking after a few months, so I got another one. I called All-Clad and they told me to use Bar Keepers Friend after each use. We did and the second omelette pan didn't last a year. I read the information on the fry pans at the WS website. I got the Scanpan Non Stick Fry Pan 10". We have had it about a year and it is like new. We use it twice a day for eggs and omelettes. We use the Bar Keepers Friend on it sometimes. The Scanpan Non Stick Fry Pan is just great and it is as good as the day we got it.
SCANPAN is working some magic on non-stick pans. Their pans perform noticeably and consistently better than every other non-stick pan we own. We use them for everything except baking and virtually nothing sticks to them. Also, have not witnessed any real degradation performance in the time that we have owned them. Only, very minor, quibble is that they take longer to heat up. Honestly, don’t know why this brand feels like a secret.
If I could only have one pan, this would be the one; I use it daily! I have other high end pans, but eggs cook best in this one. Cleanup is a breeze. To achieve optimal results, I preheat it on a lower medium setting for a minute or two, and then add my oil, butter and/ or water. I hand wash it every time. For me, this one does not disappoint!
I wish not sticking was the only problem because that would be the least of it. I bought these pans because of the smooth bottom and didn't want to scratch my new induction stove. However the oil leave the middle and goes to the sides. I have cooked hamburger patties twice and both times they were very, very slow to cook and cooked unevenly. Some other items also cooked unevenly. I have cooked on this stove with other cookware and it has not cooked unevenly so the stove is not the issue. Very expensive and disappointed with performance
It's a great pan, but a little too large for my stovetop burner & also the sides are somewhat low for my preference. So I bought a CS+ 11", absolutely the best non stick I've ever had. It's the perfect size, love the coating, I like the handle better than the Pro series, the sides are taller, & the stainless finish looks better on the rack with all my other stainless All Clad pans. Been using it daily for over 4 months for breakfast; eggs and or french toast, works awesome for both with little or now butter/oil - love this pan!
I ordered the wrong size pan by accident and wanted to exchange for a larger size. Was told that an exchange was not possible - I was to return the 'wrong size' and reorder. A return label was not provided so after costing this out, the return fee was more expensive than the pan. You'd think that a company this size might offer a return label of some sort...lesson learned. I guess I'll be keeping the wrong sized pan. Make sure you know what you need, before ordering.
I cook often and have a huge Le Creuset collection. But when it came to non stick, I wanted something different. I bought two of these large scanpan professional skillets a couple of years ago and they perform beautifully with daily use. Puts the most awesome sear on beef cuts, makes fish golden while keeping inside tender and handles eggs and frittatas delicately. Even oven safe so I can pop it in the oven under broil if I need to get a nice top sear on something. I'm looking for some smaller ones now. After two years, they're still beautiful, shiny as new and not a single scratch on either one.
