This was my first chefs knife for work when I began my career in the kitchen. I have been using it daily for the past 7 years and it still feels brand new. It has a VERY long edge life, regardless of what surface you are using it on. Really easy to hone it as well. Has superb weight distribution for optimal comfort and never caused hand cramping or pain whatsoever. I was worried the 10 incher would cause me issues because of its length, but it was surprisingly very easy to use and insanely comfortable. I am also absolutely stunned by the Shun brand. Definitely worth the price.

I use a 10 Dexter Russell Cimeter steak knife for that: number S132-10. Everten has them. Many chefs perhaps would not come across this Cimeter knife. Knife:Came in immaculate condition. Beautiful, and SHARP. Love the slight asymmetric handle. It's not intrusive, just feels right. Lightweight for an 8" full tang knife. Love the blade shape for how I use it. Belly is good for rocking cuts, but not too excessive for slicing. Point is nice, and useful. Two months with multiple users (my wife is not too picky about knife care by the way, but we have at least kept it out of the dishwasher.). Still what most would call SHARP, no traces of rust, handle fit is still perfect. I sharpened it this morning just for this review and it went fine. (I am a right handed woodworker. HIGHLY recommended - you will not be dissapointed, and if you've never used this style of knife before, get ready to - be excited!
I thought I had good knives that functioned well in all my cooking. But I found myself constantly sharpening them, which didn’t last very long. I saw knives on the Sur La Table website that seemed better and had great reviews. So I bought this one! It is a joy to slice and chop, it’s so sharp that it feels like I’m slicing through butter. I take good care because it will cut. Y fingers easily being so sharp! I love it and hope it will always so so sharp . Try it for yourself
This knife is my go to knife for everything. I purchased this at the beginning of Summer 2020 and received it in awesome condition and it was sharp. It remained sharp with the use of a honing knife and slices everything perfect. I definitely will continue to purchase more Shun knives in the future.
Good knife, not the same quality as they used to be. The store didn’t have it in stock so they offered to ship it to me which was fine. The actual knife packaging was super sticky for no reason. It was the only thing I had ordered. It not longer comes with a sheath not is there an option to purchase one in store. My recommendation is to shop around before buying based on reputation.
I received a Shun Santoku knife a few years ago, and have loved it. I finally bought this Chef knife, and cannot believe how sharp it is, how balanced and controllable it is. So happy to have this.
I received a set of Shun knives for my birthday two or three years ago. I love the feel and balance of the knives, and they are incredibly sharp. Unfortunately, even with extreme care they are damaged easily. The tip of one was damaged when we opened the box. A tip of another has been damaged even though it has never been dropped or handled roughly. I have used high end German knives for decades with no issues like this. It was quite a disappointment considering the cost of these knives.
