This is my sixth Shun knife and like the others it is an absolute joy to use, especially for boning chicken and fish. I haven’t tried it on red meat yet, but I see no reason it won’t work like a charm there too. It also does a great job on detail work for veg. It has just the right amount of flexibility and comes incredibly sharp. Personally I have a number of ways to sharpen high grade knives and find Shun knives pretty easy to keep shaving sharp.Highly recommended.

Hand washed, never even got the chance to sharpen and it chipped after 2 uses. Only used on suggested soft wood cutting boards. Very disappointing after spending 160$ on it. Was going to get one for my father as a gift but will be going with something else now after seeing the durability of this.

I wasn't feeling too good about this knife out-of-the-box. It was ok. But as one of my first Japanese knives, I was a bit disappointed at first. Then, I gave it a very light exposure to a 5,000 grit stone and a few polishing strokes on 10,000. I know that's a bit extreme for a boning knife, but I didn't want to take off too much on a brand new knife. What a difference that made! Now, without any doubt, this is one of my favorite knives. It is wicked sharp and the geometry is very useful for breaking down chickens, bone-in ribeyes, and other meat-related tasks.This knife is described as a combination filet/boning knife. I have used it to make extremely fine fillets of chicken and veal, but it's a fairly rigid knife. I bought it for my husband who enjoys cooking. He was very impressed with the quality of the Gokujo fillet knife. He particularly liked how well balanced it felt when he used it.
Handy sharp and comfortable to use. It is well balanced and ergonomic. This knife is extremely sharp and the grip is perfect for my size large hands. It makes quick work of venison and beef for sure. I have used it for weeks on a maple chopping block and it is still sharp.
This knife is great. easy to hold, razor sharp blade out of the box. the weighting is nice and balanced. the curve allows you to tackle most jobs with ease. best knife in my kitchen!
I use this knife a lot as I am in the industry, it’s maintains its edge and the curve gives a way better cut in my opinion. I use it to trim sirloins a lot and it’s a really great knife to learn butchery with
First off, let me start by saying how much I love Shun knives. I am impressed with their quality and durability. Perhaps some of the best knives that I have worked with and thats saying a lot. I bought the fillet knife for all the whole fish that I buy and therefore need to remove the bones. As expected it is sharp and cuts through the skin and bones well. However, most filleting knives are flexible to help with the filleting process. The shun knife is not flexible. I would actually give it a 3.5 but thats not an option
