These knives come from the factory with a razor sharp edge on them and hold an edge for a long time provided you don't use a glass or marble cutting board. They have also been easy to re sharpen using a very fine grit, good quality water stone when they do start getting a little dull. They are very well made, well balanced and lightweight. They are a little on the expensive side but if you have ever used one, you will never be happy with another brand of knife again.
If you are looking for a really great knife this is it! I have both the Shun dm719 and 718. Each are a little different but are excellent values in a used knife. This ( the DM719) is a bit sturdier than the Santoku 718 and you can't get quite the same sharpness with it but unless you plan to use it to shave you won't notice any difference in the two. FYI even a Shun bought used still qualifies for their factory re-sharpening program.
Life all my Shun knives, this thing is amazing. It cuts exceptionally and it easy to handle.Veggies still do stick to the side of this knife even though it's hollow-edge. But other than that, it is a truly great knife. I don't think I would pay extra for the hollow-edge, though.I wouldn't get this as your first good knife, though. It can be a bit to handle would recommend getting something closer to 5"" or 6"" since those navigate quickly through whatever you are cutting
Really like this blade. I use it on a daily basis. Does need regular honing and I've got to figure out how to sharpen it with a stone or something. First time I washed it I hadn't been careful and so ended up cutting my finger easily! Be careful!!
A wonderful chef’s knife! Well balanced and solid, but not heavy. The blade easily slices meats and veggies without much effort. Haven’t used it on herbs yet.
Best knife ever! I chose this one because it fit perfectly in my hand, was sharp as can be, and cut through hard vegetables as well as softer ones. This is the 4th Shun Chef?s hollow ground knife I have bought, 2 for gifts, and 2 for me to use at vacation house, and home. I keep them sharp with a small knife sharpener that has both Western and Asian angle grinds. This knife does the work for you, takes very little pressure to slice throughyour produce. I also have the paring knife, it?s all you need. These two are work horses.
this knife is very well balanced and very sharp: Asian knives are ground to 15 degrees not 20 degrees like US and Europeans blades. So they are closer to razors than knives. They are wonderful to use but be very careful of the blade and point, they will hurt you.
