This knife was a gift for our son in law’s 40th birthday. He had been wanting it for some time but , as the father of three active, engaged sons, he hadn’t been able to justify purchasing it for himself. He’s a creative cook and this knife is a tool he will use and appreciate for a very long time.

Blade to harder that simply requires less sharpening.We sharpen only with Shun Premier Hone steel with 16-degree guide and leather strop. 90% of sharpening is 4-5 passes on med and fine leather strop with bit of fine stropping compound that came with our two sided strop paddle.Absolutely no rusting or tarnish of any kind.You find this knife to be one of the best you ever own.

This knife was recommended by a friend and I'm so glad I listened to him and bought one. This knife has a nice weight to it and cuts like no other knife I've owned. You get what you pay for and if you're thinking about this knife, but not sure you want to spend that much on a knife, think again. You will love this knife and use it forever!
This knife is pretty, blade is the thinnest I've used. Brand new this is sharp. For a home cook maybe as sharp as any would need. The VG10 core is solid dependable steel and is easy to sharpen and holds an edge for some time. I love the profile, and the handle is a very comfortable size and shape for my medium sized hands.Cons. The top of the knife could have been rounded and or polished down a bit more. The hammered finish takes a bit more time to clean. Being that this knife has such a polished finish more maintenance and care is required to keep it looking so. It is also one of the more fragile knives in my arsenal. I would certainly suggest only those prepared to handle a knife with care to buy this knife. If you do you will have a great knife for years.
Shun gets a bad rap and I can understand some of it. At full retail I would call them over priced. If you can get one for well under retail they are some good knives. The VG10 steel is good quality, you can put a very sharp edge on them and they will hold up. I would not suggest the Premier for a novice as poor technique could lead to problems as the blade is very thin compared to German knives. I experienced hands this is a good knife. Great blade profile, nice looking, and the handle is very comfortable. My only complaints is the top edge could have been rounded a bit more for comfort and the hammered finish takes a bit more work to clean. Otherwise a fantastic knife overall.

The sales associate Tom (who happen to be a pro chef and extremely knowledgeable) recommended this Shun. Ok, got it home, gave it a quick rinse and started slicing and dicing leeks and potatoes. Well, the cliche is "cuts like a hot knife through butter" - well that is exactly what this feels like - so much so that I (slightly) nicked my fingers 2 times until I got used to exactly how sharp this blade - and the tip is. Far and away, the sharpest knife I have ever handled - so use caution as this is so much sharper (not necessarily better) than the German knives. This is the best and sharpest knife I own. I have an exceptional selection of knives - including J. A. Henkel and Wusthoff- that I love. But this knife is remarkable. The width and sharpness make it amazing for slicing and dicing. Perfectly balanced. Beautiful to look at. Love it!
This is my first nice knife, and it is amazing. It cuts through everything so well. Sharpening was easy enough to pick up on.i also got the plastic case and care box. Case is great and helps me feel a bit safer and I haven't tried out the care box. Also the knife is absolutely stunning. Would definitely recommend buying one if you're thinking about it.

Not even a small chip, but an entire 1.5'' sliver of the edge flaked off.
