I have never owned a knife of this caliber. I recently began smoking meats, and this knife is amazing for trimming and shaping meat prior to placing it in the smoker. One warning, this knife is incredibly sharp, I was unaware of the true definition of "sharp," until using this knife

This knife performs beautifully during fabrication, deboning, and filleting. This specific boning knife is one I make sure is always included in my knife kit. While the edge is sharp, precise, and clearly means business, the blade is easy to maintain with a whetstone.
