The Shun Premier Chef's Knife is an exceptionally styled and durable piece of cutlery. These knives feature a hammered blade - ""tsuchime"" in Japanese looking like they were made over a blacksmith's anvil. The hammer marks act much like the grooves on a hollow ground knife, reducing friction and preventing food from sticking to the blade. The blade has a core of VG10 stainless steel wrapped in 16 layers of stainless steel for precision and durability. Good knife but extreme care and maintenance needed

This knife is pretty, blade is the thinnest I've used. Brand new this is sharp. For a home cook maybe as sharp as any would need. The VG10 core is solid dependable steel and is easy to sharpen and holds an edge for some time. I love the profile, and the handle is a very comfortable size and shape for my medium sized hands.Cons. The top of the knife could have been rounded and or polished down a bit more. The hammered finish takes a bit more time to clean. Being that this knife has such a polished finish more maintenance and care is required to keep it looking so. It is also one of the more fragile knives in my arsenal. I would certainly suggest only those prepared to handle a knife with care to buy this knife. If you do you will have a great knife for years.

This utensil is a great addition to my kitchen, it looks good and at 10" gives me the freedom of movement to slice, dice and cut easier. I don't think I could go back to an 8" chef knife.This knife cuts so easy and is super sharp. Not to mention very beautiful to see in action

I recently bought this knife at my local WS in Upper Montclair, NJ to replace a badly chipped Wusthof chef's knife. The sales associate Tom (who happen to be a pro chef and extremely knowledgeable) recommended this Shun. Ok, got it home, gave it a quick rinse and started slicing and dicing leeks and potatoes. Well, the cliche is "cuts like a hot knife through butter" - well that is exactly what this feels like - so much so that I (slightly) nicked my fingers 2 times until I got used to exactly how sharp this blade - and the tip is. Far and away, the sharpest knife I have ever handled - so use caution as this is so much sharper (not necessarily better) than the German knives. Sleek beautiful and very maneuverable. Blade, as always promised by shun, is nothing short of razor sharp. However they are brittle knives for the inexperienced and you must become accustomed to propert technique to not chip the blade. If you do tho, shun has a lifetime sharpening warranty.

A good friend of mine that I work in kitchens with recommended I pick up a Shun for some basic vegetable chopping, etc. (Take that into consideration, this knife cannot and should not be used to trying to break apart a chicken, for example.) and it immediately chipped, cutting carrots on the same wooden cutting board I've had for many years and used successfully with many knives. Not even a small chip, but an entire 1.5'' sliver of the edge flaked off. The blade lasted a whole, I'd say, 45 seconds of use.I don't know whether I got a lemon or not, because I know some folks that swear by Shuns as being nice little workhorses, but as a fella that works in restaurants professionally, we don't make a ton of money, famously, and ... MoreCareful, these guys are very fragile. I started my set! After the pandemic forced my family to stay in doors I started cooking. It has been 10 years since I had the time or passion to cook. My big store $29.99 sets were not cutting it! The dishwasher didn't help my old knifes either. This knife will make you aware of its location at all times for how sharp this knife is. Now I have a "family" set and these are mine. I'm very amateur but in several months will tackle wet stone sharpening. I appreciate Shun for the great craftsmanship and attention to detail. As my wallet and skill increases I look forward to trying more Shun knifes!
