While drinking beautifully now, with careful cellaring this Chardonnay will develop further for up to 10 years. Selected parcels of premium Eden Valley fruit were picked at optimum flavour development while still retaining excellent acidity. Fermentation was in 500 litre puncheons, 56% of which were new and the balance all 1 to 2 years old. Refreshing acidity was retained by limiting malolactic fermentation. Selected parcels also had battonage to add texture, complexity and mouth feel. The final blend was created from a selection of individual barrels.
