Sullivans Cove 16 Year Old 2006 Single Cask TD0079 In 1994, on an island at the far end of the world, a distillery was born from humble beginnings. Located in Hobart, Tasmania, Sullivans Cove is bringing a distinctly Tasmanian twist to a whisky craft, shaped by centuries of practice. Sullivans Cove provides obsessively and slowly handcrafting single cask whisky, with no two batches the same. Each, an opportunity for exploration, genuinely rare whisky which can’t be rushed, and which can never be replicated.This Single Cask of exceptional Tasmanian Single Malt was matured for a minimum of 16 years in a unique American oak. One of 435 bottles released. It was distilled in February 2006 and bottled in May 2022. Nose: Tropical pops of juicy fruit, lemon peel and white flowers, pineapple rings and mango pulp. A pineapple and coconut note then leads into floral peach syrup, almond and sunflower seeds with a wave of sweet hazelnut cream. Taste: Signals of sweet vanillin and crème de menthe, oak, Pine-lime ice cream, macadamia and lemon starburst lollies, moving to more tropical confectionary: yellow rock candy, passionfruit coulis, lemon curd and vanilla yogurt, before resting atop a malty base.
