Love this knife, breaks down chickens extremely well. The weight feels good in the hand and the spine thickness is reassuring and helpful when cracking through poultry. Super sharp out of the box, holds it's edge well.

Great fit for Med to LG hands. Great for smaller proteins mainly chicken. I debone whole chicken for my dogs on a weekly basis and its still sharp as when I opened it. Light and easy to work with.

I have been using this knife for a few months now and can definitely say I am happy with it. I am using it at home for chickens and rabbits and I think it delivers pretty much all the home cook needs. I am particularly pleased with its performance boning rabbits, which can be fiddly at the best of times. It gets right in where I need it but has the mass and edge at the heel to go nicely through cartilage. The edge is far superior to my previous flexible boning knife and requires far less maintenance. I also appreciate that I don't feel quite as bad banging it about a bit as I would some of the more expensive honesukis. It has a good fit in my hand and a nice weight that gives excellent control. It is the best boning knife I have ever owned.
I made this purchase for making quick work of whole chickens and it didn't disappoint. In fact, buying whole chickens and breaking them down became a favourite of mine. I find myself reaching for this anytime I am working with other raw meats too...particularly slicing beef or chicken for a stir fry. May not be as eye catching as some others, but great at what it does!
Nice blade, but not light weight. I didn't notice when I bought it, but it had a spot on the spine that was scratched up. Polished out with a bit of elbow grease. Now I need to figure out how to hone and sharpen this single bevel.
Great fit & finish. Out of the box it is sharp. I would prefer to have it much sharper regardless, it is a beautiful knife well made, quality is superb. I have used it to debone chicken leg and thighs. Really makes a difference vs using chef knives.
Workhorse of a knife... great balance and the slight right handed bias help make this a dream to use. Thanks to the great staff at Knifewear for recommending this one as it wasn't even on my radar when I walked in.
I love the knife! the fact that it is stainless makes it easier for my wife to use. (I do most of the cooking and most of the knife purchases.). my only issue with it is that the single bevel is a bit too much. if i'm not careful, the knife cuts into what i'm cutting instead of straight down. but, it's super sharp and sweet. the western handle (again) is a plus for my wife.
