Honey is a sweet, syrup-like substance that bees produce from the nectar of flowering plants. The bees collect the nectar and then consume, digest, and regurgitate it inside the beehive to produce honey which is stored in wax-like structures called honeycombs, and then gathered by humans through the practice of beekeeping. Many types of honey are available, differing based on the plant source, the extraction method, and whether it's raw or pasteurised. Raw honey has been used as a folk remedy throughout history and has a variety of health benefits and medical uses. It has even been used in hospitals as a treatment for wounds. The majority of health benefits of honey are specific to either raw, unpasteurised or Manuka. Most of the honey you find in grocery stores is pasteurised. The high heat kills unwanted yeast, however can improve the colour and texture, removes any crystallization, and extends the shelf life. Many of the beneficial nutrients are also destroyed in the process.
