I had a Scanpan for over 15 years and it started to show "some" were from sharp utensils in it but it still works perfectly. The time had come t buy some more and I shopped according to handle not realizing I had the Pro series before. However, I believe these to be superior on induction ranges because of their aluminum base. Something to note: Upon first use the base oxidized and drips from cooking would not come off the sides. I looked up online and it's safe to use Barkeepers friend one the outside of the pan. As soon as I did this, everything was like new again with not trace of oxidization. In hind site, I may have bought the pro just to eliminate the extra care required.

I called support and they recommended Bar Keeper's Friend to clean (invisible to me) residue on the surface. It worked great. I saw nothing about using daily, though it does have a microabrasive and has oxalic acid. That worked great for a few months, but then I noticed the surface was looking thinner with streaks in the middle where I would brush it, and the fried egg sticking worsened. My solution was to ony do scrambled eggs stirred up in a bowl with a little milk first, and using BUTTER as the oil, which I think might be the main reason for improvement, though haven't tried frying an egg with butter yet.

I have only had the pan for a few weeks but it is in use daily, always for breakfast (eggs, sausage, bacon) and many other meals later. The bacon and sausage were the the destructive forces in the other "quality" non-stick pans. I find that I can fry the same items with this pan with lower heat and without the burning of the curing agents in the foods which caused sticking. To be honest, I might have made the other pans last longer by using lower heat as well but this pan is a much higher quality and the surface seems much more durable. The manufacturer says you can use metal utensils (which I will never do) but the other non-stick pans forbid the use of metal. The pan is quite heavy though, part of which is due to the solid steel and thick handle. I would have preferred a silicone handle,especially since the end closest to the pan can get warm/hot so you have to be careful to not grab it too close when very hot. Since the pan is on the heavy side you may do that to make it easier to handle. All in all I really like the pan although the price is pretty steep. I think it is worth it though. I fry eggs in it without grease and they slide right out, like the other kind will do at first and then not later.
The Scanpan Fry Pan is a superb addition to our collection of Scanpan products. We use this 24cm. pan for a variety of applications on our induction cooktop. But, for me, what makes it such an excellent choice is its ability to cook an omelette, egg whites in my case, that folds to perfection with the ingredients - fresh mushrooms, spinach, mixed herbs - prepared perfectly. It is important to remember to heat the pan first before pouring in a small amount of oil and then immediately adding whatever you're frying.
The Scanpans are amazing. They cook with even heat and you can get a good char with them. The after cooking clean-up is a breeze. We liked them so much we actually replaced every Calphalon and All-Clad pan we had with similar sized Scanpans. We even replaced all the cooking pots with Scanpan pots. We have a professional cook-top, so it's important to have high quality cooking pots and pans. In our opinion, you don't get higher quality than Scanpan.
I bought first Scanpan skillet about 2 years ago. Most expensive skillet I ever bought, and the best non-stick by far. This skillet is larger, and in initial use performs as well or better than my original. The size is great, but I'd still like to add the 12". We take good care of these skillets, and its paid off. Our skillet performs as well as when we first bought it, and based on performance so far I expect the same or better from this one. Very pricey, but you often get what you pay for. Our Scanpans are simply great, and worth every penny. I highly recommend them if you're looking for a top tier non-stick cooking solution. Fantastic cookware,
For my anniversary I wanted to add a nice skillet to my kitchen. After reading the reviews and considering the lifetime warranty I chose this pan. I haven't used it a lot and as I'm trying to be cautious with it, to be sure I cause no damages. I've also given my husband strict orders on how to use it properly. My tip, read the booklet that comes with it.The times I have cooked with it has cooked very well, very evenly. It is a sturdy but heavy pan but that is not an issue for me. I don't recommend for those who have a problem with gripping heavy things. I have cooked on the stovetop (electric) and oven and it did very nicely. Very easy to clean up too. Have been looking for a stainless steel pan for quite some time. Didn't want Teflon coating -doesn't hold up well for long. This new nonstick is amazing. Still have a hard time using a metal utensil prefer softer spoons and spatulas. Makes wonderful crepes and omelets. Most of my cookware is cast iron. I can still hear my grandmother asking me if I wanted her cast iron when I was 24. She made the statement how heavy it gets when you are older. I laughed...I am not laughing now. She was right (as usual) but I still enjoy my cast iron- builds muscle.
This is a wonderful. pan and the non-stick coating lasts for a long time. This was a replacement pan for one that I had for many years. It goes in the dishwasher and the old one stated to loose its coating one one side where I often cracked eggs. The coating goes over the top edge and this time I will be more careful not to damage the integrity of the edge.
