Knife is beautiful. Purchased as a gift so can’t comment yet on cutting performance so this is a review on aesthetics. F&F on handle is decent. Handle furrel has a transition edge. Furrel is decent quality. Wood is decent also. The handle maker could have selected a nicer piece. Stainless scratches easily. I made a walnut Saya and just test fitting while removing sanding dust I still managed to put a tiny scratch in the shiny part of blade. Measured you closer to 255 which was a BONUS for me and as a slicer, longer is better!!If I weren’t in a hurry I would have thrown on a custom handle and this blade would be well suited for a really nice piece of wood. I’d buy again.

This is my 3rd of this line, others being the 240mm chef and the funky, single bevel, boning knife. They all have excellent steel, a solid handle built for larger hands, and a reasonable price.I need the carver for serving big chunks of meat because the wider chef blade is just too awkward.

The construction is great and is a huge piece of VG10, even without the designs it is beautiful. Recently got it for my mom to take over the carving and slicing chores of the house, cooked or uncooked this thing is a light saber. Not too big, handle is great, great control. I will certainly be getting one for myself, for the price it is unbeatable.

These are exceptionally well made knives. They are well balanced, of quality materials and the blade never fails to hold an edge. I’m sure that there are finer quality knives available out there somewhere, but these are at a price that won’t mean you have to get therapy if one of them should get damaged. I’ve gotten rid of my German knives and I’m replacing them slowly with the Japanese knives. Most are Tojiro.

We bought this knife for my dad few months ago and he absolutely love one so we had to buy on for my brother too! They use it for all the meat they smoke and it make everything a breeze! Not too mention how nice the gentleman at the booth is who walked us through everything and helped us pick the perfect knife! Will buy more in the future.

Really happy with the knife. Quality is miles ahead and sharper steel than the Henckels it replaced. Really nicely balanced and comfortable grip.

When I picked up the knife, I have noticed few noticeable (can't feel it with finger tips) parallel scratches(?) on the blade, and the handle seemed really dry - a lot of white spot/scuff marks. The staff I spoke to said all of these are normal, perhaps it was the lighting and that they were super that day, and she just wanted to get rid of me lol. I went home, oiled and wax the handle, and it seems a bit better now.Zero complaint about the blade's sharpness though, I no longer need to "saw" my steaks, roast etc. This is a very good blade for the price.

I am a young cook from germany and i only use tojiro knives. They are afordable, they are easy to sharpen, they look great and can take a good beating! This one i bought for my souschef, but i wish i could have one myself! He is absolutly crazy about this knife. He only worked with Gude and Global knives before and now he is addictet to tojiro too! I hope i will have many more good purchases here on global kitchen japan! The shipping is fast and you always get information about the shipping status along the way! I can only recomment to buy here

Used it for butchery. Good for cleaning and trimming, A bit harder to cut bigger steaks and pieces, but perhaps the knife isn't designed for it. Good length, size, thickness. Stainless steel too.
