In the glass this wine shines in a sparkling gold with light golden highlights. The perlage rises to the surface in very fine bubbles and conjures up a wonderful mousseux. The nose is pampered by an outstanding aromatic complexity. Aromas of roasted apples, stewed apples and peaches unfold - filigree underlined by spicy notes. Vinification of the Bollinger Special Cuvée Magnum The grapes (Chardonnay, Pinot Noir and Pinot Meunier) come from 85% Grand-Cru and Premier-Cru vines of Champagne. The base wine is aged in stainless steel tanks as well as in oak barrels. After the cuvéeing follows the second fermentation. This sparkling wine matures on the lees for at least 3 years. This is twice as long as the appellation prescribes. Once the maturation is complete, the sparkling wine is disgorged.
